The first step to making the filling is to get out your electric mixer and in a bowl mix the powdered Swerve and coconut oil together.

Then add your Vanilla, Peppermint Extract, and Heavy Cream.

Once you make the filling, stick it into the freezer for about 10 minutes just to firm it up slightly so that it’s easier to form.

Take the filling out of the freezer and with a small scoop or spoon put a small spoonful on a tray or plate lined with parchment paper.

Next, flatten it out with a flat butter knife or a spoon as much as possible but it doesn’t need to be perfect.
