In a small bowl combine the peanut butter, egg, and low carb sweetener. Mix all the ingredients together and stir until fully combined.

Using a 1-inch cookie scoop, scoop out cookie dough ball onto the baking sheet. Roll each dough into 1-inch balls and place back on the cookie sheet.

With a fork flatten the cookies in a criss-cross pattern.

Bake for 10-12 minutes.
