Ingredients

- Eggplants - Salt - Ricotta cheese - Egg - Parsley - Italian seasoning - Garlic powder - Tomato sauce - Parmesan cheese - Mozzarella

Roast the Eggplant: Roast them in the oven for about 10-12 minutes until the eggplant softens and is pliable.

Make Cheese Filling: In a medium-size bowl combine the ricotta, egg, spices, chopped fresh parsley, parmesan cheese, and 1 cup of the mozzarella. Mix until well blended.

Layering Eggplant Lasagna: Using a 9 x 13-inch baking dish, spread a thin layer of tomato sauce on the bottom of the dish. Next, lay out a layer of eggplant slices.
