Grilled Keto Stuffed Mini Peppers

These perfect and easy to make Keto Stuffed Mini Peppers are filled with gooey cheese and are the perfect Summer snack. Low carb and gluten free too!

Ingredients

- Cream cheese - Goat cheese - Cheddar cheese - Sun-dried tomatoes - Mini sweet peppers

Mix your cream cheese and goat cheese in a medium-sized bowl. This helps if you let your cheese soften for about 10-15 minutes before.

Pour in your bag of shredded cheese. It might look like a whole bag is too much, but trust me it’s not.

Then add in your sun-dried tomatoes. Now mix everything together.

Cut off the tops of your peppers and take out the seeds. You don’t want to cut off too much of the top and lose half of your pepper.

Now start stuffing your peppers with your cheesy mixture. Grill for about 15-20 minutes at about 350 degrees.
