When you are told that you have diabetes and all the eating of goodies comes to a screeching halt, it’s easy to become discouraged about the things that you once were able to eat but now you can’t eat anymore. Sometimes you just want to eat something sweet!

Well, this Almond Flour Keto Brownie recipe that I came up with is low in carbs and satisfies your sweet tooth, and yes it’s also chocolate! Can you believe it, with all the fudgy chocolaty goodness that brownies should have!! 

Finally, a dessert that you can eat! Also, all your family and friends will love these low carb brownies too. They won’t even know the difference. One of the best things about this Keto brownie recipe is that 1 piece is only 1.2 NET Carbs….I know crazy right?!

What Ingredients are in Low Carb Keto Brownies?

Almond flour – I replaced the regular flour with almond flour because it has a good taste and consistency and very low in carbs because its just almonds which are very low and healthy. You can also use coconut flour but in my opinion almond flour makes the best substitute in brownies. The brand I like to use for these cookies is the Kirkland brand from Costco. 

It’s a very good almond flour because it’s extra finely ground, making the Keto Low Carb Brownie lighter, but you can use any brand that you would like. Kirkland’s almond flour is also a good price which is great because you will be using it a lot to make these yummy keto brownies and other great Low Carb sweet treats. 

The Sweetener – Since you obviously can’t use regular sugar to make these brownies, I replaced it with monk fruit because it’s a great no-carb substitute in desserts. I use classic Lakanto Monkfruit, which is zero net carbs per serving, zero glycemic, zero calories, and keto-approved. Plus the taste is great, no after-taste like some other sweeteners.  

It’s so easy because the portions are one for one so there are no hard mathematical equations! Even though Monk fruit is my sweetener of choice, there are other options to choose from such as Swerve and Xylitol.  These are the 3 I have found work the best. 

Variations of these Keto Brownies 

What is another variation of these low carb brownies? If you are anything like me I love nuts. The more the better. So add some protein to your brownies and add them either into your batter or lay them on the top. In my opinion, the nuts add so much flavor to any brownies because the nuts and the chocolate together complement each other so well.

One thing I like to do with my brownies is put some chocolate chips on the top for an extra chocolate flavor or you can have them without it if you prefer.

If you really want to take these low carb brownies to another level, you can also add some sugar-free Nutella for great flavor and extra fudginess! The combination of hazelnut and chocolate can’t be beaten…Yum!

Peanut butter is another great flavor with chocolate and a great combo for all of you peanut butter lovers. Once you pour the almond flour brownie batter in your pan put some spoonfuls of peanut butter on top and then swirl it throughout the brownie.

Just make sure to get a peanut butter that’s low in sugar or best yet, sugar-free to keep your carbs as low as possible.

How to Make Low Carb Keto Brownies

First, preheat the oven to 350 degrees, and grease an 8×8 pan. 

Then take a small bowl and melt your butter in the microwave. I recommend you covering it with a paper towel so it doesn’t splatter all over the microwave. 

In a medium bowl take your melted butter and combine it with the powdered Swerve, eggs, and vanilla. Whisk until combined.

Now add the almond flour, cocoa powder, baking powder, and salt. Whisk until all lumps are out.

Pour the brownie batter into the baking dish. Sprinkle the chocolate chips on top.

Bake for about 12-15 minutes. You can use a toothpick to test whether they are done or not and you want to center to be slightly wet. Be careful that you don’t overcook them. There’s nothing worse overcooked brownies.

When they are ready take them out of the oven and allow them to cool before cutting them. You can cut them sooner but they will be a lot messier.

Yes, they absolutely are Keto friendly! Using almond flour as the base and a sugar-substitute like monk fruit or swerve, you can be totally guilt-free eating these brownies. Each piece is only 1.2 Net Carbs so enjoy!

It’s amazing how many carbs are in the foods that we are used to eating our whole lives. When you have to be on a low carb diet or choose to be on a low carb diet, your eyes now become open to other options out there, especially to find good replacements for some yummy sweet treats. 

I spent my first year having diabetes thinking that I could never have another dessert ever again if I was going to get healthy, but to my surprise I found flour and sugar replacements to make some yummy things like these Keto Low Carb Brownies. 

Are Almond Flour Brownies Gluten-Free?

Yes they are!  These Low Carb Brownies are also Gluten-Free, so anyone who has a gluten allergy like one of my friends does, they can feel free to eat these treasures too. 

They become gluten-free by replacing traditional flour with almond flour or coconut flour or any number of other nut flours like hazelnut flour…etc. Finally, great options to choose from for people who can’t eat gluten.

How do I Make Brownies Fudgy? 

Everyone I know always asks me to make them fudgy brownies. After all, who wants to eat a dry brownie? So I found the best way to get them to be fudgy is if you undercook them a little. Take them out of the oven a minute or two before you think they’re ready by looking at them. You may think that you have to cook them more but you probably don’t.  

Also, another trick I found helpful is to chill them in the refrigerator before you cut them they will have an extra fudgy consistency. I know that may be a little hard for those of you who like to eat brownies hot to warm right out of the oven, but try it once and see if it doesn’t make a difference.

How to Tell that Your Brownies are Done and Not Overcooked?

When you think that they may be done, put a toothpick in the center. If it’s not done yet it will be wet. The goal is to lean toward cooking it a little less done so that they will be fudgier rather than dry.

They will continue to cook for a few minutes once you take them out. Place the pan on a cooling rack to cool evenly.

How to Store Keto Brownies 

This depends if you want to store them to eat in the next few days or freeze them.  If you are going to eat them, after cooling off, cut them in serving size pieces and place them in a plastic container with a tight-fitting lid and place on your counter or in the refrigerator. If you refrigerate them they will stay fresher longer but you may find them so delicious that they won’t last too long around your house anyway. 

You can also feel free to freeze them individually in baggies so that it’s a quick treat you can take out and take to work with you so that when everyone else is sitting around the office having donuts with their coffee you will have a low Carb treat to eat.

Description

Delicious and fudgy almond flour Keto Brownies that are low carb and also gluten-free.  A perfect low carb dessert option!


Ingredients

  • ½ cup of butter melted
  • ⅔ cup powdered Swerve
  • 3 large eggs 
  • 2 tsp vanilla
  • ½ cup almond flour
  • ⅓ cup cocoa powder
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup chocolate chips for topping

Instructions

  1. Preheat the oven to 350 degrees, and grease an 8×8 baking pan.
  2. Take a small bowl and melt the butter in the microwave, or melt in a saucepan on low heat on the stove. 
  3. In a medium bowl mix the melted butter with the powdered Swerve, eggs, and vanilla. Whisk together. 
  4. Add almond flour, baking powder, cocoa powder, and salt. Whisk together until the big lumps are out. 
  5. Pour brownie batter into the greased baking dish. 
  6. Sprinkle with chocolate chips.
  7. Bake for about 12-15 minutes. Don’t overcook. 

Notes

2.3 NET CARBS Per Serving

For a little variation, add sugar-free nutella, peanut butter, or any type of nut.

To make sure you get fudgy brownies, undercook them a bit.

How much monk fruit ? And is this IN PLACE OF the swerve ? I want to use monk fruit as you suggested BUT YOU FORGOT TO TELL HOW MUCH ??‍♀️

Hi Sue, Thank you for trying our brownies. If you would like to use monkfruit you certainly can, we have used both. Yes, it is in replacement of the Swerve so use the same amount so that was 2/3 cup. Once you make them you can see if you need more or less sweetener because it carries with different people.

I'm curious I plug your ingriendents into my recipe builder and it has carbs over 17 grams a brownie not sure how your getting the carbs in your calculation.

Hi Jane, You don't need to add the Swerve into the recipe calculations. Fiber and sugar alcohols get subtracted from total carbs when calculating net carbs. Hope this makes more sense to you. Hence they are only 2.3 net carbs per brownies.
