Description
This is a Sugar-free Keto Fruitcake which is easy to make and delicious, all the while avoiding all those carbs and sugar you find in a regular fruitcake. Perfect on the Keto diet or just trying to eat healthier.
Ingredients
- 4 Jumbo Eggs
- 4 Tbsp melted Butter
- 1 1/2 Tbsp Vanilla
- ½ Cup MonkFruit
- 2 Tbsp Orange Zest
- ½ tsp Salt
- 1 ½ Cups Almond Flour
- ½ tsp Baking Soda
- ¼ cup dried Cranberries
- ¼ cup dried Cherries
- ½ cup Pecans
- ½ cup Walnuts
Instructions
- Whisk together eggs, butter, vanilla, monk fruit, orange zest, and salt.
- The next step is to add the almond flour and continue to whisk until smooth.
- Add baking soda, whisk in.
- Add fruit and nuts. Stir.
- Line your loaf pan with parchment paper and then pour batter into the loaf pan.
- Bake fruitcake at 350 degrees for 30 minutes.
- Take out your fruitcake and let cool before cutting it into slices.
Notes

If you want to moisten your fruit, you can use dark rum or fruit juice.
Check the expiration date on your baking soda to make sure it’s not too old or else your low carb fruitcake will not rise.
If you place a second pan in the oven with water, it will help to keep your Keto fruitcake moist while baking.
