Description
This is a recipe for easy to make old fashioned Keto Gingerbread Cookies that are low carb but taste delicious and are fun to eat.
Ingredients

2 cups Almond Flour

⅓ cup Monk Fruit

4 Tbsp Butter

1 Jumbo Egg
-
½ tsp Baking Powder
-
1 ½ tsp Vanilla
-
1 tsp Molasses
-
1 Tbsp Cinnamon
-
1 tsp ground Ginger
-
¼ tsp ground Cloves
-
¼ tsp Nutmeg
Instructions
The Cookies
- In a large mixing bowl, beat the Monk fruit and the Butter with an electric mixer.
- Then add the Egg and the Vanilla. Blend together with the mixer.
- In a smaller bowl combine Almond Flour and Spices.
- Add flour mixture to the butter mixture.
- Next, add the Molasses and beat everything together.
- Let the dough sit in the refrigerator for at least 30 minutes to chill up.
- Get 2 pieces of parchment paper and roll out your dough in between the 2 pieces of paper to desired thickness. Use the cookie cutters to shape cookies.
- Take a cookie sheet and line it with a piece of parchment paper and carefully place cookies on a cookie sheet and Bake at 350 degrees for about 8-10 minutes.
The Icing & Decorating
- The next thing to do while your gingerbread men are baking is to whip together a quick and simple sugar-free icing out of only 3 ingredients to decorate your gingerbread cookies.
- Blend Swerve, Heavy Cream and Vanilla together with a spoon until smooth and creamy.
- Put icing in an icing bag with a special decorating tip and squeeze the icing out of the bag to make eyes and buttons etc….on your gingerbread men.
- Wait 10 minutes before eating until your icing hardens and enjoy!
Notes
2.6 NET Carbs per cookie.
Do not overbake your gingerbread cookies or they will get too crispy and break. Just bake them until they are golden in color, part crispy around edges and soft center.
Make sure that you use parchment paper on your cookie sheet so that your cookies will be able to easily come off without breaking. No low carb kitchen should be without parchment paper.
The best way to remove cookies without breaking them is to, first of all, let them cool before trying to remove them and then use a very thin spatula to get underneath them better in order to lift them.
If you want your gingerbread cookies to be crispier then roll out the dough to be a little on the thinner side. If you want them to be a little softer then roll the dough out on the thicker side.
