This Keto Chocolate Mug Cake is such a great recipe if you are craving a low carb cake. It is easy to make, all in one cup. It only takes 90 seconds in the microwave, and it puffs up to be a delicious and moist low carb dessert.
Ingredients
- 1 tbsp refined coconut oil
- 1 egg
- 3 tbsp almond flour
- 2 tbsp granulated monk fruit
- 1 tbsp Hershey’s unsweetened cocoa powder
- ½ tsp baking powder
- ½ tsp vanilla
Instructions
- Melt the coconut oil in the mug in the microwave for about 30 seconds.
- Next, add the remainder of the ingredients: egg, almond flour, cocoa, baking powder, sweetener, and vanilla.
- With a spoon or small whisk, thoroughly blend it well.
- Place the mug in the microwave for 90 seconds. You will see the cake rise and then it will sink when you take it out. If you add too much batter to the mug it may go over the sides. If you are afraid of that happening, then stick a plate under the mug to catch the overflow until you get the hang of how much to fill the mug or what size mug to use.
- Take it out when done and garnish with toppings if you so desire.

Do not overcook or else it will be hard and dry.
Fill the cup halfway because during cooking it will rise way up.
The keto cake in a mug may at first rise higher than the top of the cup, so for easy clean up put a plate underneath.
Use large eggs, avoid using extra-large or jumbo, they are too big for one single keto mug cake.
The low carb mug cake sinking in the middle is common, so no worries, just use some whipped cream or other toppings which will cover it over.
You do not need to grease the mug, it will come out fine without it.
Don’t forget to check the date on the baking powder because you need it in order for the cake to rise.
Cooking time may vary depending on the size of the mug.
Need it to be nut-free? Try sunflower seed flour instead.
Don’t eat dairy, then use avocado oil or coconut oil instead of butter.
