Description
This is a recipe for homemade Keto Peppermint Patties that are really easy to make and taste so good. If you like peppermint you will love these.
Ingredients
- 1 cup powdered Swerve sweetener
- ¾ cup Coconut oil, refined
- 1 Tbsp Peppermint Extract
- 1 tsp. Vanilla
- 2 Tbsp Heavy Cream
- 5 ounces Lilly’s sugar-free Chocolate Chips
- 2 tsp Crisco Shortening
Instructions
- The first step to making the filling is to get out your electric mixer and in a bowl mix the powdered Swerve and coconut oil together. (You will have to soften the coconut oil first in the microwave for just a few seconds).
- Then add your Vanilla, Peppermint Extract, and Heavy Cream.
- Once you make the filling, stick it into the freezer for about 10 minutes just to firm it up slightly so that it’s easier to form.
- Take the filling out of the freezer and with a small scoop or spoon put a small spoonful on a tray or plate lined with parchment paper.
- Next, flatten it out with a flat butter knife or a spoon as much as possible but it doesn’t need to be perfect.
- Now freeze them again for another 15 minutes or so. The colder they are the easier it will be to coat them in chocolate.
- Get another plate or tray and line it with another piece of parchment paper.
- Dip each frozen piece of filling into the chocolate completely and place it onto the parchment paper. Be sure to put the bumpy side down and the smoother side up. Let the excess chocolate drip off as much as you can before putting them onto the paper.
- Freeze for a few more minutes until the chocolate sets up firmly. Then remove from paper and put into an airtight container and refrigerate or freeze.
Notes
Less than 1 NET Carb per pattie
Use refined coconut oil. It is virtually tasteless. We made the mistake and used extra virgin coconut oil in a couple of recipes thinking we were using the best kind and regrettably they tasted very strongly like coconut.
When you dunk the peppermint pattie in the chocolate use a 3 prong fork. It will be easier that way to get it off without messing up the chocolate.
If you still need help getting it off the fork try using a toothpick on the underside of the peppermint pattie to help guide it off.
