We have the BEST Keto Taco Casserole right here! It’s loaded with ground beef, and topped with cheesy goodness. It has everything you love about a taco without all the carbs. Your entire family will love it!
Ingredients
- 2 lbs ground beef
- 4 tbsp homemade taco seasoning
- ½ cup chopped onion
- ½ cup chopped bell pepper
- 1 can Rotel tomatoes with green chiles
- 6 eggs
- ¼ cup heavy cream
- ⅓ cup sour cream
- 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 350 degrees. Gather all your ingredients.
- In a large skillet or frying pan add the ground beef. Using a meat chopper mix up the ground beef.
- Add in the taco seasoning, onions, and pepper. Cook on medium-high heat.
- Once the beef is basically cooked, add the can of Rotel tomatoes. (Be sure to drain the can first)
- In a large mixing bowl add the eggs, heavy cream, and sour cream. Whisk together.
- Transfer the ground beef mixture to a 9×13 casserole dish.
- Pour the egg mixture over the beef.
- Top with shredded cheddar cheese.
- Bake for 30 minutes.
- Let sit on the counter for about 5 minutes before cutting.
- Top with your favorite toppings and serve.

HOMEMADE TACO SEASONING IS THE BEST!
I like to use 85% or 80% lean ground beef
If there is liquid after cooking the ground beef, you may want to drain it.
A meat chopper is a great tool for breaking up and mixing ground meat. If you don’t have one I’d suggest getting one.
9×13 casserole dish is perfect for this recipe. Glass or ceramic will work.
Topping Suggestions: sour cream, olives, salsa, cilantro, tomatoes, jalapenos.
Egg-Free Option: If you have an egg allergy you can leave out the eggs and the egg mixture entirely. Instead, mix in 8 oz of cream cheese with the meat mixture while still in the frying pan. Transfer to baking dish, then top with cheddar cheese and bake.
TO REHEAT IN THE MICROWAVE: Place in a microwaveable dish for 60-90 seconds or until desired heat has been reached.
TO REHEAT IN THE OVEN: Bake in the oven for 10-15 minutes at 300 degrees.
FREEZE BAKED LEFTOVERS OPTION 1: If you have leftover keto Mexican casserole, place it in an airtight container and place it in the freezer for up to 3 months.
FREEZE BAKED LEFTOVERS OPTION 2: Bake the low carb taco casserole, let it completely cool. Cover with plastic wrap and foil. Place in the freezer for up to 3 months.
THAWING INSTRUCTIONS: Let your keto taco casserole thaw in the fridge, before baking it. If you place an ice-cold glass or ceramic baking dish straight from the freezer to the oven it may crack when reaching the hot temperature. Remove the plastic wrap and foil. Bake for 15-20 minutes at 350 degrees.
