Ingredients
Salt and Pepper Pumpkin Seeds
- ¾ cup Pumpkin Seeds
- ¾ tsp Olive Oil
- ½ tsp Salt
- ½ tsp Black Pepper
Italian Seasoning Pumpkin Seeds
- ¾ cup Pumpkin Seeds
- ¾ tsp Olive Oil
- ½ tsp Salt
- ½ tsp Italian Seasoning
- ½ tsp Garlic Powder
- ½ tsp Paprika
Instructions
- Take your pumpkin and take off the top with a sharp knife.
- Take your hand and scoop out the seeds, and place them in a bowl of warm water. Watch how the pulp falls to the bottom and the seeds float to the top.
- Take the seeds out of the water and place them on a towel. Then take some paper towels and blot them dry.
- Place them in a bowl, toss them in olive oil and your seasonings and spices of choice. Mix them up thoroughly so that the seeds get evenly covered.
- Next place them on a cookie sheet which is covered with parchment paper or a silicone baking mat. Spread them out evenly on the pan in a single layer.
- Roast at 350 degrees for 25 minutes. The seeds will be crunchy which is the consistency you want.

The heavier the pumpkin is the more seeds it has in it.
If you salt the water it will plump up the seeds.
To get the pumpkin pulp off the seeds easily soak them in warm water in a bowl or in boiling water on the stove.
To make sure that the seeds are evenly covered with the seasonings, place them in a bowl along with the oil or butter and toss them all together, rather than just sprinkling them on top.
When you lay out the seeds on the cookie sheet, spread them out evenly in a single layer.
Stir the seeds halfway during the roasting process to allow them to cook evenly.
