If you love bacon and eggs you are going to love this Spinach Salad recipe. It’s very easy to make and delicious to eat. It can be eaten as a complete meal or as a side dish.
Ingredients
- 6 cups fresh Baby Spinach
- 6 Campari Tomatoes
- ¼ cup Red Onion, chopped
- 2 hard-boiled Eggs
- 6 strips of Bacon
- Shaved Parmesan cheese
Instructions
- The first step is hard boiling the eggs. Boil the water and then place the eggs in the water. Boil for 10 minutes, remove and peel off the shells. Then cool and slice.
- Bake the bacon in the oven on a cookie sheet on top of parchment paper, then drain off the grease and break it into pieces.
- Chop onions.
- Cut tomatoes.
- Shave some parmesan cheese.
- Now spread out the spinach in a bowl or a platter.
- Put all of the other ingredients on top of the spinach.
- Serve with your favorite dressing.

To ripen tomatoes leave them on your counter for a few days.
Do not put your tomatoes in the refrigerator, they lose their flavor and can become soggy.
Baby spinach is the best to use because it’s very tender, unlike mature, full-grown spinach.
When making the hard-boiled eggs, make a few extra to eat another day.
Place chopped onions in a bowl of ice-cold water for 10 minutes to make them milder in taste…
