Description
Strawberry Salad is a great Spring or Summertime salad recipe. Light and refreshing, no matter how you say it, this is one of the best healthy salads ever. Avocado and feta cheese are excellent options and we like to add raspberries too. Share it with your friends and family and they will continue to ask you to make it over and over again.
Ingredients
Salad
- 2 cups Spinach
- 1 cup Baby Arugula
- ¼ cup chopped Walnuts
- 1 cup Strawberries
- 1 Avocado
- ½ pint Raspberries
- 4 oz Feta chunks or crumbles
Dressing
- ⅔ cup Lime Juice
- ¼ cup Cilantro
- 1 cup Olive Oil
- 1 tsp Deli Mustard, dijon
- 2 tsp Powdered Swerve
Instructions
Salad
- The first thing that you need to do is to grab a large bowl that is large enough to mix the salad in without spilling it out of the bowl onto the counter.
- Wash your lettuce or spinach or whatever greens that you use in the salad.
- Cut the avocado in half, and then take out the pit and peel off the outer skin. Cut it into bite-size pieces.
- Wash the strawberries and let the water drip off and gently pat dry if you can. Now slice them into pieces.
- Rinse the raspberries and repeat the process just like you did with the strawberries.
- Cut or break the walnuts into the desired size pieces.
- Put all of the ingredients into the bowl and lightly toss.
- Top with the feta cheese.
Dressing
- Get a small bowl that you can mix the ingredients in.
- Chop the cilantro. Put it in the bowl.
- Measure out the other ingredients one at a time and then add them to the bowl.
- Then with a whisk blend everything together and mix well. If you have a small glass jar then you can put in the ingredients and shake them all up good.

This recipe for strawberry salad can be changed around and not really affect the flavor. There are a lot of changes in nuts, fruit, greens, and cheese that are all good, depending on what you like or don’t like.
Do not dress the salad until you are ready to eat it or else the dressing can make the ingredients soggy in your strawberry summer salad.
A red onion trick is to soak the onions first in cold water. This will remove the strong aftertaste associated with eating raw onions, while at the same time preserving the onion flavor.
