Description
This Keto Stuffed Mushrooms recipe is an appetizer that can be served at an elegant occasion like a wedding or that can be served at a casual occasion like a cookout in your backyard or anything in between.
They are irresistible whatever way you decide to make them.
Ingredients
- 15 medium-sized white mushrooms
- 3 links hot or sweet Italian sausage
- ½ cup chopped scallions
- 3 tbsp chopped red bell peppers
- 1 ½ cups shredded mozzarella cheese
Instructions
These Stuffed Mushrooms are easy to make and also fun to eat. Let’s see how to make them.
- The first thing that you do is to wipe off your mushrooms with a damp paper towel, or if they are extremely dirty you can rinse them off but be sure to pat them as dry as you can.
- Then take a small knife and pop off the stems and then with the same small knife or with a small spoon scoop out as much flesh on the inside of the mushroom to allow a big enough space to be able to fit your stuffing.
- As you stuff them put them flat on your baking tray or baking dish.
- Once all of your mushrooms are prepared, then brown up your sausage meat in a frying pan. Drain off the grease.
- While your sausage is cooking, mince the scallions and red peppers and mix into your sausage.
- Next, stuff your mushroom caps with your sausage mixture.
- Once all of your mushrooms are stuffed then top them off with mozzarella cheese, as much as you would like, a small amount or a large amount.
- Bake your Sausage Stuffed Mushrooms at 375 degrees for about 20 minutes, until the mushroom is soft and the cheese is melted.

The smaller that you mince your veggies the less space they will take up and therefore the more stuffing that will fit inside the mushroom cap.
The bigger the mushrooms the more stuffing you can fit in….yummy.
When you remove the stems from the mushroom cap, don’t throw them away because you can use them in something else that you make like in a soup or in your roasted veggies, or in a stirfry…etc.
You can prep your mushrooms the day ahead and refrigerate until you are ready to bake them.
You can either buy already ground sausage meat or if you buy links you can remove the casings to get ground sausage.
If your mushrooms are really dirty don’t soak in water to get the dirt off of them because they will be too wet and can get soggy. Just wipe them off with water and a paper towel.
