Description
This is a delicious Baked Zucchini Fries recipe which replaces the common potato version with a much healthier version that’s easy to make. When you eat the best zucchini fries you will forget that you are eating something healthy since they taste so good!
Ingredients
- 1 cup Parmesan Cheese
- 2 medium Zucchini
- 2 Eggs
- ¼ tsp Black Pepper
- ¼ tsp Garlic Powder
Instructions
Preparing the Zucchini
- The first step in preparing the zucchini is to wash it off.
- Now dry off the squash well with paper towels.
- Grab your favorite knife and a cutting board and cut off the ends of the squash.
- Cut the zucchini into equal-sized strips, ones that would resemble french fries.
- Put the eggs into a bowl and beat them with a fork.
- Next, get another bowl for the parmesan cheese and add the spices to the cheese and blend well.
- Dip the zucchini strips into the egg and then into the cheese mixture.
Baking the Zucchini Fries
- Preheat your oven to 425 degrees.
- Get a baking sheet and line it with parchment paper and evenly line up the zucchini fries on the paper, keeping some distance in between them so that they don’t stick to one another and they can crisp up better.
- Spray the top with a fine mist of oil if you wish to.
- Bake 15-20 minutes depending on the thickness of the fries. Keep an eye on them.
- When done baking place the fries on a plate covered with a paper towel.
- Serve.

Before you coat your zucchini with cheese or any other topping, make sure that you dry off the squash first with a paper towel which will help you make the best crispy zucchini.
You will get more crispy results if you flip the fries over halfway through baking them. Also if you spray the top with a light mist of cooking oil it will aid in crisping up the fries.
You can replace the parmesan cheese with asiago or romano cheese.
If you have a dairy allergy you can use almond flour instead of the cheese.
If you don’t want to use the egg yolks then it’s ok to just use the egg whites.
Brown the zucchini fries a little more for the last 2 minutes by putting them under the broiler. Watch them so that they do not burn.
