Chicken Zucchini Poppers

Shred your zucchini and then once it’s shredded squeeze out as much water as possible. Mix the ground chicken with the zucchini together, blending well.

Add your garlic, parsley, cilantro, salt, and pepper and blend thoroughly.

Line a baking sheet with a piece of parchment paper. Use a spoon or scoop and place your popper mixture on the parchment paper, spaced out evenly.

Take a fork and press down each popper halfway to an oval shape but not flat.

Pour oil in the frying pan, just enough to cover the bottom of the pan. Fry until the internal temperature is 160 degrees.
