Cauliflower Potato Salad Recipe

This Keto cauliflower potato salad is a healthy and low carb recipe. It’s low in sodium, lower in calories than traditional potato salad, and the cauliflower itself is high in fiber and B vitamins. 

Ingredients

SALAD: - Cauliflower - Bacon - Scallions DRESSING: - Mayonnaise - Salt   - Black Pepper   - Paprika - Ground Mustard - Dill

Cut the cauliflower in half and then in quarters.

Place the cauliflower in a large pot of water that has been salted and bring it to a boil.

Cook it until the cauliflower is tender with a fork, which will be about 7-12 minutes. Drain it in a colander and let it cool completely.

Once the cauliflower is cooled off, put it in a large bowl, one that is big enough to blend it thoroughly.

Cook the bacon. Once the bacon is cooked then chop it up and add it to the cauliflower.
