With a small spoon scoop out as much flesh on the inside of the mushroom to allow a big enough space to be able to fit your stuffing.

As you stuff them put them flat on your baking tray or baking dish.

Once all of your mushrooms are prepared, then brown up your sausage meat in a frying pan. Drain off the grease.

While your sausage is cooking, mince the scallions and red peppers and mix into your sausage.
