Description
This recipe for keto peanut butter cups is one of our favorites, and who wouldn’t agree with me that the chocolate and peanut butter combo is one of the best. Why do you think that Reeses’s were so popular for many years? Now you can make your own in no time at all, freeze them and take them out one at a time when you want to indulge in your low carb treat.
Ingredients
Chocolate Layers:
- 2 cups lily’s chocolate chips
- 3 tbsp coconut oil
- 2 tsp vanilla
Peanut Butter Layer:
- ½ cup natural creamy peanut butter
- ¼ cup powdered sweetener
- 1 tsp vanilla
- ½ tsp salt
- 1 tbsp coconut oil (optional)
Instructions
- The first step is to get a bowl and mix the peanut butter with the swerve, salt, and vanilla. Blend until everything is mixed thoroughly. Set it aside for a few minutes.
- Now you are going to prepare the chocolate by getting another bowl and adding your chocolate chips to it, along with the melted coconut oil and vanilla. Now mix these things together until smooth.
- Line your mini muffin tin with cupcake papers. Then add just enough chocolate to fill the bottom of the papers, about 1 Tbsp. Shake the pan from side to side to even it out. Place the muffin pan in the freezer for about 10 minutes to firm up the chocolate.
- Take the pan out of the freezer and with your small spoon add about 1-2 tsp of peanut butter. Shake the pan again to even out the cups.
- Now add your top layer of chocolate, about another tbsp, and shake from side to side one more time.
- Refrigerate or freeze the finished product until ready to eat. Enjoy!!
Notes
2 NET CARBS PER KETO PEANUT BUTTER CUP
The goal when making peanut butter cups is to make them smooth:
Start with creamy peanut butter, not the chunky kind.
Use powdered sweetener, not the granular type.
I usually use a small baby spoon to make the layers in the mini pan. It is just the right size and easy to work with.
When making the different layers, instead of trying to smooth it out with a spoon or knife, shake the pan from side to side so that the ingredients will flatten out to give you a nicer looking peanut butter cup.
Storing: It is really easy to store the peanut butter cups. Place them in an airtight container and store them in the refrigerator or freezer.
