- 2 large heads of cauliflower
- 8 oz softened cream cheese
- 3 cups shredded cheddar cheese
- ⅓ cup sour cream
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ⅛ tsp cayenne pepper
- 10 slices bacon
- ⅓ cup chopped fresh chives
Instructions
- Preheat the oven to 425 degrees.
- Chop the cauliflower into small pieces. Place on a baking sheet and drizzle olive oil, with salt and pepper. Bake in the oven for about 15-20 minutes or until cauliflower is soft and pieces start to brown up.
- Once the cauliflower is done roasting, transfer it into a large bowl.
- Cover a baking sheet with parchment paper, and put bacon on top. Bake at 425 degrees for about 15 minutes or until it’s reached your desired crispiness.
- In the bowl with the cauliflower, add the softened cream cheese, cheddar cheese, sour cream, salt, garlic powder, onion powder, paprika, and cayenne pepper to the roasted cauliflower. Mix until well combined. If you let the cauliflower cool for a few minutes, then you can mix all the ingredients with your hands.
- By now your bacon should be done. Chop it into small pieces and add it to the cauliflower.
- Chop your fresh chives and add to the cauliflower too. Mix everything together well.
- Transfer into a baking dish and bake for about 30 minutes or until bubbling.
- Serve right away and enjoy!
