Description
Our Low Carb Apple Pie Recipe is a simple but delicious way to make squash taste like apples so that you really do think that you are eating apple pie. You will fool everyone, just try!
Ingredients
Pie Crust:
- 1 ⅓ cup almond flour
- ½ tsp xanthan gum
- ½ tsp salt
- 6 tbsp cold butter
- 1 egg, lightly beaten
- ¼ cup cream cheese
Filling:
- 6 cups yellow squash
- 2 tbsp butter
- 1 cup golden monk fruit
- 1 cup lemon juice
- ½ tsp xanthan gum
- ½ tsp salt
- 2 tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp ginger
- ¼ tsp allspice
Instructions
- Our first step is to make the pie crust. Mix all ingredients together in a food processor. Do not overmix.
- Then wrap your crust in plastic wrap and put it in the refrigerator.
- Repeat steps for the top crust.
- While the dough is chilling then begin to make the filling
- Peel your squash and then cut it into small pieces the same as you would do if it was apples.
- Lightly brown the butter
- Add the apples and saute until desired tenderness.
- Add spices and golden monk fruit and stir. Then add the xanthan gum and lemon juice. Stir until well blended.
- Cool so that it doesn’t make you pie crust soggy or fall apart.
- While the filling is cooling it is time to roll out the dough to make your crust.
- Place dough in between 2 pieces of parchment paper. Sprinkle with a small amount of almond flour so that it doesn’t stick to the paper.
- Take the rolling pin and roll out the dough to the desired thickness and size. Begin rolling from the center
- Now roll out the top crust the same way you rolled out the bottom crust.
- Next, cut it into 1-2 inch strips and begin to weave them to make your lattice design. If they break apart no worries, just piece them together.
- Place an egg into a bowl and beat up with a fork.
- Brush top of the pie with the egg wash for a shiny top.
- Bake 350 degrees for 30-40 min or until golden.
- Halfway through baking put a crust guard around the crust so the crust doesn’t burn.
- Wait 20-30 minutes before serving and enjoy!

Some helpful tips when making this Keto Apple Pie –
It’s better to buy smaller squash and zucchini as they have less, and smaller seeds. That way when peeled and cut, they really do resemble apples. They are also slightly sweeter.
Don’t overmix the dough or it becomes so much harder to work with.
Partway through baking your pie continue to monitor the crust edges so that it doesn’t burn. Buy a pie guard and place it around the edges. It will protect your pie from burning.
Before putting the pie filling into your pie crust make sure that they are both cooled off so that your pie crust doesn’t melt.
