This recipe for Keto Stuffed Zucchini Boats is easy to make and delicious to eat and will become one of your family’s favorite low carb meals.
Ingredients
- 4 medium Zucchini
- 2 lbs Ground Chicken
- 8 links of Italian Sausage, hot or mild
- 1 cup of Scallions
- 1 cup of chopped Parsley
- 1 ½ cups Tomato Sauce
- 1 tsp Salt
- 1 tsp Pepper
- 2 tsp Garlic Powder
- ½ cup Romano Cheese
- 2 cups Mozzarella Cheese
- ½ cup Olive Oil
Instructions
- The first step to make your zucchini boats is to wash and dry your squash.
- The next thing to do is to slice them in half lengthwise and lay them out flat on a cookie sheet or baking dish.
- Then take a knife or spoon and hollow out the inside, taking out the seeds and the loose flesh.
- Make your stuffing mixture.
- Put the olive oil in your frying pan and cook up your meats.
- Next, chop your scallions and parsley and add them to your meat mixture and cook together. Add your spices.
- When your meat mixture is cooked, then add the tomato sauce and stir well.
- Now stuff your Zucchini Boats with your stuffing, putting as much stuff in there that you can fit.
- Sprinkle your Romano or Parmesan cheese on top. Now you are ready to bake them.
- Bake the zucchini boats at 350 degrees for about 15 minutes or until your squash is done to desired tenderness.
- Take them out of the oven and then top them off with shredded mozzarella cheese.
- Place back in the oven for another 5 minutes or until the mozzarella cheese is fully melted.

For this recipe, you can also use yellow squash and also small eggplants.
If you use sausage, you can use sweet or hot, either way is delicious.
Any kind of cheese that you like an be used in these Keto boats, mozzarella, fontina, provolone, romano, parmesan…..etc
Try to get small zucchini because they are more tender than large ones, plus they are just the right size for an individual serving.
Any kind of tomato sauce will work and if you can make your own homemade sauce that’s even better.
If you don’t have any sauce you could use chopped tomatoes. That’s good too.
