Cauliflower Casserole

This cheesy loaded cauliflower casserole has all the flavors of a loaded baked potato, without all the carbs.

Ingredients

- Cauliflower - Softened cream cheese - Cheddar cheese - Sour cream - Salt - Garlic powder - Onion powder - Paprika - Cayenne pepper - Bacon

Preheat the oven to 425 degrees. Chop the cauliflower into small pieces. Place on a baking sheet and drizzle olive oil, with salt and pepper.

Bake in the oven for about 15-20 minutes or until cauliflower is soft and pieces start to brown up.

In the bowl with the cauliflower, add the softened cream cheese, cheddar cheese, sour cream, salt, garlic powder, onion powder, paprika, and cayenne pepper to the roasted cauliflower.

Chop your fresh chives and add to the cauliflower too. Mix everything together well.
