We’re Leigh and Stephanie, a mother and daughter combo team who love cooking, spending time together and eating right. Our story hasn’t always been the way it is now though and we’re going to share with you a little bit about us, how we ended up here and what benefits we’ve received on our journey.
Our hope is that we can help you with whatever food-related struggle you’re going through and that you can find comfort in ours!
Leigh’s Story:
My name is Leigh, I’m a mother of 2, a loving wife and I live to cook and entertain guests. They don’t call my house “The Fun House” for nothing you know! 😉
I love Disney World, my pets and of course, feeding my guests!
Food has always been an integral part of our families’ life, just not always the way I imagined. I’ve always been an active, healthy person with very few health concerns until February of 2018. To my great surprise, I was diagnosed with diabetes. Not type 1, nor type 2, but a rare in-between form. I was devastated and didn’t know what to do.
After meeting with many medical experts, doctors and reading and reading and reading some more, I decided my diet needed to change and I needed to go low carb! I’ve always loved carbohydrates (pasta, rice, my homemade cookies, etc), I now suddenly found myself not being able to eat the food that I loved so much! I also was worried that I would hate this new way of eating and wouldn’t be able to find and make recipes that I enjoy.
I was wrong! I soon found out there is a whole world out there of great low-carb/no-carb recipes and it’s really opened my eyes. I realized that just because you are eating healthy doesn’t mean you can’t eat well and really enjoy your food.
Learning to eat better and drop the carbs from my diet has helped me tremendously and made me realize: “this diet-thing really works!” That brings me to my ‘I Can’t Believe It’s Low Carb Journey.’
Through the pages and recipes on this site I’m sharing all of my family’s recipes with you. I want to help anyone else out there like myself who has had to make changes in their diet for their health. I want you to realize that eating low-carb can still be tasty and fun, and I hope I can have a positive impact on your life along the way!
This is my story, I’ll let my daughter Stephanie tell you about hers…
Stephanie’s Story:
Hi, my name is Stephanie and I am my mother’s daughter because I too, LOVE to cook! It’s my passion really. There is just something so awesome about finding a new recipe, trying it out and then seeing the joy on my family’s face when they eat it.
I’m married to the love of my life, Dan and we have an amazing puppy, Pepper! I love traveling and exploring new places and especially trying out the different kinds of food there wherever I go.
My story is a bit different from my moms. From the time I was young, I’ve always struggled with my weight and my life has been a constant yo-yo diet, jumping from one “amazing” plan to the next. Seeing that I am a social person, this is not a good combo as I love to entertain and go out with friends.
I’ve never considered myself someone who loves exercise or is overly active, unlike my mom who is a walking machine! So if I wanted to lose weight, my diet has had to be incredibly restrictive causing me to give up after an average of 2-3 weeks.
I too got a scare after having a series of health concerns, and after talking with a great nutritionist she told me there were several alarming signs about my health and I knew at the age of 30 I needed to make some drastic changes. This wasn’t just about my weight, but now this involved my health! Boy did this wake me up!
This brings me to my ‘I can’t believe it’s low carb journey.’ I too like my mother changed my diet and started eating low-carb and I’ve been so happy ever since. No, it’s not always easy, but together with my mom we’ve been able to support each other and still have fun cooking together. We’ve been working on some amazing low-carb and Keto recipes that we want to share with all of you.
