Best Keto Chaffles Recipe – Everything You Need to Know

Even though you can’t eat carbs and regular waffles, you can still have these delicious and easy to make chaffles, a combo of cheese and waffles. They are so versatile and there are so many things you can do with them.  Since becoming the biggest Keto and Low Carb craze, we are going to talk about just what are chaffles and all the things you can make with them!

When you can’t eat carbs and you can find something to eat that you thought was off the table for you it’s exciting, really exciting. When I was diagnosed with diabetes I thought I would never be able to eat a lot of my favorite foods again. But by making these chaffles you can have them just like you would have a waffle.

Keto Chaffles can be used as a dessert with berries and whipped cream, or an egg sandwich for breakfast, or with a burger, or as bread for a Coldcut sandwich….and the list goes on. They are the ultimate low carb food!

What is a Chaffle?

A chaffle is a combination of cheese and egg in the form of a waffle. There are a few kinds of cheese you can use like mozzarella or cream cheese for example. 

It also can be made with a few other ingredients and used as a replacement for a lot of foods that a person can’t eat if they are not eating carbs, such as almond flour. The great part is you can use a chaffle like bread for a sandwich or a breakfast treat like waffles, or other things that we will tell you about in this article.

Are Chaffles Low Carb/Keto? 

You may be wondering if these amazing little chaffles are low carb or Keto? Yes, they are definitely a good choice for anyone who is on a Keto/low carb diet because chaffles are made of all Keto-friendly foods.

They use the simple ingredients Cheese, eggs and almond flour which are perfect.

What do Chaffles Taste Like?

You may be wondering what the chaffles taste like. Strangely even though one of the main ingredients in them, besides cheese, is an egg, most people say that they actually don’t taste like eggs. Some say they do taste like eggs. That’s why the almond flour is goo inside. It makes them taste more like bread or waffles. That way they make a good alternative to bread for making sandwiches.

We had some friends try the chaffles when we made them for the first time. They had them as a breakfast sandwich with eggs and bacon and cheese. Then wwe made burgers and they had them as a roll substitute with a burger, lettuce, tomato, and onion…yum

We also made a cold cut sandwich with turkey and ham and cheese…the same was true here…When you add things to the chaffles they take on the flavors of the other foods.

What Can I Do with Chaffles?

There are so many ways you can make these chaffles. Here are just a few ideas…

If you want to have breakfast, you can make a chaffle with butter and sugar-free keto maple syrup.

You can make a breakfast sandwich with sausage or bacon or ham with an egg and cheese

You can have them for lunch or dinner with a burger and all its fixings or a cold cut sandwich like ham or turkey or roast beef etc.

You can make your own mini pizza out of a chaffle with tomato sauce, mozzarella cheese and whatever other toppings you want.

Then you can also make a dessert chaffle sprinkled with cinnamon/sugar, of course not real sugar but with monk fruit or swerve. Or my personal favorite,  a chaffle with strawberries and whipped cream on top.

What Ingredients Do I Need to Make Keto Chaffles

This is for the basic recipe of chaffles. From here you can alter the recipe for other varieties 

Mozzarella Cheese – this is the “CH” part of the chaffles, hence a main ingredient

Jumbo Egg – I  like to use jumbo eggs. They are just a little larger and as a result, add just a little more egg to the chaffles. 

Almond Flour – This is a staple ingredient in a lot of low carb recipes in the replacement of regular wheat flour. It’s made of only almonds and is very low in carbs, only 3 carbs in 2 Tbsp.

Psyllium Husk Powder – This is an ingredient that is used in low carb recipes and it acts like glue in baking to hold things together.

Baking Powder – This ingredient is used to help the chaffles to rise. 

What Kind of Cheese Can I Use to Make Chaffles?

You may wonder, just as I did, about what cheese to use to make chaffles. The cheese varies depending on what you are doing with the chaffles once you have made them. 

Mozzarella cheese is a main type of cheese to use in making basic chaffles. It’s pretty neutral and as a result can be used in breakfast waffles, as bread for breakfast sandwiches with egg, meat, and cheese. 

Mozzarella cheese is also perfect for making a wide range of sandwiches such as cold cuts and BLT, and burgers…etc and mini pizza chaffles are a delicious choice too. 

If you want to switch it up and try something different, cheddar cheese is also great and will give you a similar taste.

Also cream cheese is a good choice when making chaffles to be used for sweet treats such as with strawberries and whip cream on top, or with blueberries inside like blueberry waffles….etc. You get the idea!

Do You Need Almond Flour for Chaffles?

Another common question we get about chaffles is if you have to use some kind of flour like almond flour to make them.

You don’t absolutely need to use almond flour, but in my opinion, when you add it, it definitely makes your chaffles taste more like regular waffles or bread.  It also really helps to get the consistency to come out more like waffles and bread.  

So while almond flour isn’t 100%, in most cases it’s going to improve everything about the chaffles. 

What Type of Waffle Iron do I Need?

So far making chaffles sounds great, but what kind of special equipment do you need to do it?

You can certainly use a regular full-size waffle maker, but it’s kind of big, so the best thing to invest in to make chaffles is the Dash mini waffle maker. It makes the perfect size chaffles for breakfast sandwiches, lunch sandwiches, mini desserts, breakfast waffles….etc. 

There are other brands aren’t as easy to use and they cost more.  You can’t go wrong with the Dash mini waffle maker, you can buy it for $20 or under. It’s a great deal.

How Long Does it take to Make Chaffles?

The great thing about cooking chaffles is that they are so easy to make. It only takes a couple of minutes to mix it up and in 3 minutes in the mini waffle maker to make each one. That’s so quick to be able to have a homemade, low carb breakfast or lunch. 

Plus they are so versatile, in a few minutes you could have enough to feed a whole family no matter what meal you use them for!

Different Variations on Keto Chaffles

When I first heard of chaffles my first thought was how weird they sound. I said to Stephanie that this is going to be hard to make. But she went out and bought us the Dash mini waffle maker and we went to work trying to learn how to make them and how many ways we could create to make them.

Here are just a few that we tried that are so yummy:

Blueberry chaffles taste like blueberry muffins or blueberry pancakes

Chocolate/brownie chaffles…who doesn’t like chocolate in things

Another good one is with everything bagel seasoning in it so it tastes like an everything bagel

A couple more where the main ingredient is bacon, and who doesn’t love bacon!!! One is bacon and cheddar and the other one is bacon with jalapeno peppers.

Apples on top of your chaffle is a yummy combo, add some cinnamon and you may think you are eating apple pie

Cinnamon sugar chaffles, so easy to just sprinkle cinnamon and granular monk fruit on top, it makes a great breakfast with a cup of coffee.

How to Make Chaffles – Step by Step

Once you have decided on the chaffle recipe that you are going to make, cooking them is a breeze. Start by measuring out your ingredients and blend them together in a bowl.  

You need to mix together the cheese, egg and almond flour, along with psyllium husk powder and baking powder. Stir well until everything is blended.

Next heat up your waffle maker. There is just one temperature. Just plug it in and it starts heating up.  

When it is preheated, place enough mixture in the waffle maker to spread out evenly but just enough so that when you put the lid down it stays inside and doesn’t spill out over the edges. By doing this you will ensure that your chaffles are completely round.

Cook for about 3 minutes, until the chaffles are golden and lightly crispy, which is the perfect consistency.

Remove chaffle from waffle maker and set aside.

Put the 2nd half of the batter into the waffle maker and repeat process.

More Tips for Making Chaffles

It’s always helpful to have some tips when you are making a new recipe that you’ve never made before. Let me share a few things that I have found helpful.

Not having a strong egg taste – Some people say that they think their chaffles taste too eggy, especially if you don’t add any almond flour. You could always use egg whites instead of whole eggs. The whites have a lot less taste and they are lighter. Also the more things that you add to the chaffle the less eggy it will taste. It tends to take on the flavor of the added toppings or ingredients inside the chaffles.

Less cheesy tasting – If you want it to taste less cheesy use the mozzarella rather than other types of cheese. The mozzarella is milder than others.

Make them thinner – If you want crispier chaffles put less batter in the waffle maker, make then thinner. You could also let them cook longer and they will be more crispy.

Keep the chaffle maker closed – Once you have poured your batter into the waffle maker, as much as you are tempted to peak, just leave the lid closed. If you keep opening it up it will affect the texture of your chaffle because it won’t cook properly.

Don’t overfill it – If you overfill the chaffle maker it may overflow and create a big mess.

Pre-heating is key – Your batter is less likely to stick to your waffle maker if you preheat your waffle maker.

Don’t make a mess – For easy clean up just use a  damp paper towel. It’s so quick and easy to wipe out your chaffle maker.

How to Make them Crispier

When your chaffle is done cooking, it will get a little crispier after it cools. After experimenting making them and you decide that’s not enough for you and you would like them even crispier, you can leave them in the waffle maker another 30-60 seconds. 

Another alternative is you could put a little cheese on the waffle maker before you pour in the batter and then add some more cheese on top after you pour in the batter. Because the extra cheese will be in the waffle maker a little longer, the result will be a crispier chaffle.

If you put less batter in the waffle maker and make them thinner, then they will be crispier too.

Other Diets they are good for

We all know that chaffles are great for a Keto or Low Carb diet, but that’s not all…

Gluten-free –  These chaffles are very good for a person who has a gluten intolerance. The cheese, eggs and almond flour are all gluten-free ingredients

Sugar-free – There is no sugar in these little wonders

Vegetarian – This sounds like a perfect recipe for a vegetarian

Nut-free – Chaffles can be nut-free if you did not put almond flour in them. Just use eggs and cheese as the base and add other things that you can eat, such as fruit or bagel seasoning…etc

Making Chaffles Ahead of Time

First of all, you can definitely make your batter ahead of time and keep it in your refrigerator until ready to make your chaffles. But cook them the same day because once you crack open eggs they should be used the same day to prevent bacteria. 

Making your batter ahead of time is nice because if you are making a lot of chaffles for a big group of family or guests, you can mix up a big batch and then cook as needed.

How to Store Keto Chaffles 

Now that you’ve made your chaffles, it’s important to know how to keep them fresh.

Once you have made a bunch of chaffles and if you’re anything like me, I love leftovers. Do the work once and reap the benefits over and over, especially when you’ve been working all day and you don’t feel like cooking. 

Just make sure that you wrap the chaffles tightly and store them in your refrigerator for 5 days. Just pull them out and pop them in the toaster oven or microwave and they are ready in just a few quick minutes. Then you can make a sandwich or appetizer or dessert….

Can I Freeze Chaffles?

Yes for sure you can freeze your cooked chaffles. Just like regular waffles, chaffles will freeze very well if wrapped properly. 

Just wrap in aluminum foil and then in a Ziploc freezer bag. Or you can store them in an airtight plastic container and also place them in a freezer bag. By wrapping them well they will keep for about 6 months in your freezer and you can take them out on or two at a time. 

Chaffles are a great thing to have for a quick breakfast when you are heading out to work or if you want to make a quick sandwich to take to work, or a quick dinner, just take them out a couple and make for yourself a quick burger or mini pizza. 

Just like a traditional waffle, these chaffles thaw out pretty quickly especially if you pop them into a toaster oven or microwave. So in 5 minutes, they are ready to use.

  • ½ cup, heaping, Whole Milk Mozzarella Cheese, shredded
  • 1 Jumbo Egg
  • 2 Tbsp, heaping, Almond Flour
  • ⅛ tsp Baking Powder
  • ½ tsp Psyllium Husk Powder

Only 2.3 NET CARBS per chaffle

Keep the waffle maker closed the entire time so that the  chaffle cooks evenly.

If you preheat the waffle maker it will make it easier to clean afterward.

If you overfill the waffle maker, it may make a big mess as it overflows.

The almond flour makes the chaffle taste more like bread or waffles. If you don’t add it, your chaffle can be a little too eggy tasting. 

If you can’t have almond flour then you could just make your chaffle with eggs and cheese. Then add other toppings for flavor or other ingredients inside to change them and add more flavor.

If you want your chaffles a little crispier, then cook it for 3.5 or 4 min. Or you could put in less batter and make them thinner which will in turn make them crispier. 

Make sure to use whole milk mozzarella because its fewer carbs than other varieties of cheese.

I followed your instructions to the T except for subbing 1 Tbl Swerve brown sugar instead of the second Tbl of almond flour. Loved it topped with a few sugar free chocolate chips and a tiny bit of sugar free syrup. Excellent, most like regular waffles and no sticking to the griddle problem. I did preheat well. Thanks!

This is a good article and I'd like to give it at least 5 stars - BUT - I've never met a pot or pan, or waffle iron grid, with a non-stick coating, that I didn't end up simply loathing; even the best and most expensive of them eventually peeled their coating and left flakes of it in the food being cooked. Also, I would've liked you to have made some mention of coconut flour - as a substitute for almond flour. But for these two negatives I would have given 10 stars - BECAUSE you include psyllium powder in your recipe. This is a great additive as it holds the batter together, makes the chaffles thicker, and helps to keep it from overflowing. The new castiron stuffed waffle waffle iron I just ordered is said to require a thick batter - because its plates aren't machined to attain a tight leak-proof fit for runny batters. We'll see. I am interested recipe ideas for stuffed chaffles, and this article helped. Would like to see more about "stuffed chaffles!" Would like to be put on your mailing list when you get around to such an article, but not before. Thanks for a great job.

Hi Laureen, Thanks for the great rating on our recipe. Making chaffles was new for us. We bought a mini chaffle maker that seemed to work the best. We were pleased with it, and nothing stuck to it. The chaffles came right out in one piece. Maybe making some other chaffles will be a good winter project for us to do some experimenting. Stay tuned.
