Our Crustless Pizza is a fun alternative way to enjoy family pizza night! Besides being a quick and easy weeknight meal, it can be easily adapted by adding your favorite toppings. This keto crustless pizza is a fantastic recipe for all of you low carb dieters!
We all know how busy life can be and some nights you just don’t want to spend too much time making dinner. When we have those nights this crustless pizza is the way to go. Besides tasting great, it’s beyond easy to make and is a quick dinner.
One of my favorite things about this crustless pizza recipe is that it’s basically all made in one pan. Well technically I used two pans, but the second one was for sauteing my mushrooms and onions, so if you end up omitting those ingredients then you will only need to use one pan.

What is Crustless Pizza?
Crustless pizza literally is exactly how it sounds….it’s a pizza without the crust. We use all the other parts of a pizza including the sauce, veggies, meat, and last but not least the CHEESE.
All the ingredients go into a skillet pan and then it is baked until the cheese is melted and is all ooey and gooey. In my opinion, it’s pretty much like a pizza casserole, and who of us don’t love casseroles?! I know I do!!
Is Pizza without Crust Keto-Friendly?
100% YES this pizza without crust is keto-friendly. In fact, it’s the crust in normal pizza that would make it not keto. However, since we removed the crust and left you with everything else, it’s a great low carb and keto meal.
How Many Carbs in Pizza without Crust?
I chose to divide the no crust pizza into about 5 servings but you could easily get 6 servings out of it if you need to.
But based on 5 servings this is the nutrition information:
1 Serving of Crustless Pizza – 4.8 NET CARBS, and 350 CALORIES.
Remember though, these numbers are based on my exact ingredients and quantities. It will change if you choose to omit or add different ingredients.
A little tip is if you lower the amount of sauce or veggies it will lower your carb content. By adding more protein it will still be filling while not adding extra carbs. However if you are not counting carbs, and you are a big veggie lover then go ahead and load it up!
What Ingredients are Crustless Pizza
- Ground Italian Sausage – I used Johnsonville mild ground sausage, but use whatever brand you like.
- Spices – Combination of both garlic powder and Italian seasoning.
- Veggies – We sauteed baby bella mushrooms and chopped onion.
- TIP: Never salt your mushrooms until after they are cooked, otherwise too much liquid will come out of them.
- Low Carb Tomato Sauce – Try our homemade keto tomato sauce or our keto pizza sauce. Either of them will work.
- Mozzarella Cheese – Shredded whole milk mozzarella was my choice. But fresh mozzarella will work too.
- Pepperoni – I like to use Boar’s Head thin-sliced pepperoni. But feel free to use any brand you like.
The Sauce
You have a few options for the sauce in a crustless pizza. If you are on a low carb diet, watch how much you add as the carbs can add up quickly, especially if you are using a store-bought sauce. Here are a few of my recommendations:
- Homemade Keto Tomato Sauce: ¼ cup – 16 calories, 3.2 net carbs
- Homemade Keto Pizza Sauce: ¼ cup – 15 calories, 3.1 net carbs
- Rao’s Homemade Marinara Sauce: ½ cup – 50 calories, 3 net carbs
- Rao’s Pizza Sauce: ¼ cup – 40 calories, 3 net carbs
The Cheeses
- Shredded Mozzarella
- Fresh Mozzarella
- Feta
- Gorgonzola

- Parmesan or Pecorino Romano

Topping Combos:
As far as topping combinations go, it’s pizza so pretty much anything goes. Pizza and pasta are the two things that you pretty much add almost anything to and it’s delicious. Here are a few good combos that we like:
- BBQ Chicken – Replace the sausage with shredded chicken, add sliced red onions, homemade Keto BBQ Sauce, and shredded mozzarella.
- Traditional Veggie – Add all the veggies you can think of! Don’t forget though if you are on keto veggies have carbs, so keep that in mind.
- Caprese – Sausage or ground beef, add some sliced fresh tomatoes, fresh mozzarella, fresh basil, and drizzle with olive oil and vinegar.
Tools to Use
You don’t need anything super special to make this no bread pizza.
- Cast Iron Skillet – This is the best pan to use, but if you don’t have one it’s ok. Go ahead and use a frying pan that is oven safe, or a baking dish.
How to Make Keto Crustless Pizza
Follow these easy steps to make this Crustless Pizza Recipe:
Step 1: Cut your veggies.
Step 2: In your cast iron skillet add the ground sausage and the spices. Fully cook it, making sure to brown the sausage.
Step 3: Drain the cooked sausage getting rid of the extra oil. Transfer the sausage back into the skillet. Set aside. This step isn’t mandatory but highly recommended.
Step 4: In a small frying pan add the mushrooms and onions with 1 tsp of olive oil and saute until tender.
Step 5: Spread the keto tomato sauce over the sausage.
Step 6: Evenly lay the cooked mushrooms and onions on top of the sauce.
Step 7: Sprinkle the chopped basil.
Step 8: Cover the top with shredded mozzarella cheese. Add the pepperoni on top of the cheese.
Step 9: Bake at 400 degrees for 10 minutes.
Step 10: Serve and enjoy!

- The amounts of toppings, sauce, and cheese can all be altered.
- For a small no crust pizza for 2…half the recipe and use a small casserole dish instead.
- Cook your veggies and meat before assembling your crustless pizza or they might not be cooked enough.
Do I Have to Use a Skillet? Can I Cook Crustless Pizza Another Way?
No, you absolutely do not need to use a cast-iron skillet if you don’t own one. I own one and love using it whenever I can and I love that it can go straight from stovetop to oven.
You can use ANY baking dish that you want. Unless you are doubling the recipe, you should stick with something on the smaller size like 8×8, 9×9, or any other dish around that size.
How Many People does this Pizza Serve?
Our low carb skillet pizza has about 5 good size portions. But if you are super hungry then you can easily divide it 4 ways as well.
If you need to serve a large crowd, then go ahead and double the recipe.

What to Serve with This Recipe?
I prefer serving this breadless pizza with a nice basic green leafy garden salad, or a Caesar salad! In my mind, there has always been something so comforting about any type of pizza and salad.
For some alternatives, you could make any kind of salad like a low carb zoodle salad, strawberry salad with avocado and feta, creamy keto broccoli salad, or even a spinach salad with bacon and eggs.

Making Ahead & Storing Options
You can do all the prep work ahead of time and just hold off on baking the crustless pizza until you are ready. I actually love doing all my prep work ahead of time that way all my dishes are done and my kitchen is clean.
Assemble the crustless pizza and place it in the fridge until you are ready to bake it.
How to Reheat Crustless Pizza?
Reheating your leftover crustless pizza is easy. You can reheat it in 3 different ways:
- Microwave – Place the leftovers in a microwave-safe container and heat for 60-90 seconds.
- Oven – Bake the leftovers at 300 degrees in an oven-safe baking dish for about 10 minutes.
- Stovetop – In a skillet or frying pan place leftover crustless pizza and turn the burner on medium heat. It should only take about 5 minutes or so to reheat.
Can You Freeze No Crust Pizza?
Yes, you can definitely freeze this no crust pizza, it should stay fresh for about 2-3 months. Place the leftovers in an airtight container and place them in the freezer.
To help prevent freezer burn, you can cover the top of the crustless pizza with a piece of plastic wrap and then cover it with the container’s lid.

- ½ tsp garlic powder
