When I had to cut out carbs from my diet I never knew that there were alternatives. Who doesn’t love good rolls?! Now I am so excited because I’ve been learning so much about how to use low carb ingredients to make replacements of the high carb versions of things that I was so used to eating.
Dinner rolls, I could actually eat, and you can too! Wow! I am excited to share this recipe for low carb dinner rolls with you.
Once you get the hang of how to make the KetoFathead Dough, there will be no stopping you from making endless other things like Keto Rolls, Bread and many other things with pretty much the same recipe. Then you can even make yummy sandwiches again without the extra carbs!!
Can I Eat Dinner Rolls on a Keto Diet?
Normally a person on Keto can’t eat dinner rolls because they are too high in carbs. But happily, now there’s a way to make low carb rolls, bread and pizza dough and still stay on your Keto diet.
Our Keto Dinner Rolls are only 2 net carbs each, now that’s a great deal!
What is Fathead Dough?
What a crazy name for bread: fathead dough. You may be wondering where that name came from. While Tom Naughton was creating the movie “Fat Head” he created a pizza dough recipe.
Now it refers to a dough that is low carb/Keto and that is made from just a few key ingredients, cream cheese, mozzarella cheese, eggs, and a low carb flour, like nut flours.
What Ingredients are Keto Dinner Rolls
Mozzarella Cheese – It may seem crazy to make rolls with mozzarella cheese, but it’s the main ingredient to form the dough
Cream Cheese – This may also seem weird but blended with the mozzarella it is what gives the low carb rolls their consistency.
Egg – Helps to bind the rolls together.
Almond Flour – Nut flours have become a staple in low carb baking and cooking, and almond flour is the most popular nut flour.
Baking Soda or Powder – Using either one of these will aid the rolls to rise.
Can I Substitute Almond Flour for Coconut Flour?
Almond flour and coconut flour are not interchangeable, they both act differently so you can’t always substitute one for the other. This fathead dough recipe will not come out the same if you substitute the almond flour with coconut flour. In fact, it may ruin it.
If you have a nut allergy, and can’t use almond flour, there are recipes that use coconut flour to make rolls, but it’s not an option in this recipe. Here is a Coconut Flour Roll recipe you might like.
Are These Dinner Rolls Chewy?
The texture is a lot like regular dinner rolls. The outside is crusty and the inside chewy, only without the carbs! I could hardly believe it, and they are so easy to make. They are a welcome treat when you want to eat bread.
How to Make Keto Dinner Rolls
You may be wondering how to make your Keto dinner rolls, especially since you may never have made or even heard of fathead dough before this.
So the first thing you do is put the 2 cheeses in a bowl and stick it in the microwave and melt the cheeses together for about 30-45 seconds, (depending on the temperature of your microwave).
Once it’s melted, place it in a food processor with the egg, flour, and baking soda. Blend all these ingredients together for about 30 seconds or until blended together and it resembles dough.
When your dough is ready, form it into a ball and wrap it in plastic and put it in the refrigerator to chill up for at least 30 minutes.
Preheat the oven to 400 degrees. While it’s preheating, take the dough and cut it into 10 pieces.
Next line a cookie sheet with parchment paper. Roll the fathead dough into balls and place them onto the paper. One trick is to lightly slam them down so that the bottom gets flat but the top stays rounded.
Melt 2 Tablespoons of butter and brush it on the tops of the rolls. This will help your toppings stick better, and give your rolls a better taste.
Sprinkle on the top any spices that you would like.
Place your rolls in the oven to bake for 12-14 min.
Place a second cookie sheet in the oven with 8 ice cubes on it to add moisture to help the rolls rise.
Once your rolls start to turn a golden color they are done. Start checking after about 10 min because some ovens run hotter than others and you don’t want to burn them.

Tips to Making the Perfect Keto Dinner Rolls
There are a few tips that I found to be helpful and you may too when making your Keto dinner rolls.
To get your keto rolls to rise better use baking powder instead of baking soda. I have tried both but in my experience that baking powder does indeed make the rolls wise better.
By handling the dough gently it adds more air pockets on the inside of the rolls which will make your low carb rolls more like regular rolls in texture.
For an alternative to melted butter, you can use an egg wash on top of your rolls to make the seeds stick better. However, it will not make your rolls shiny because it absorbs into the rolls.
If you whisk your egg before adding it to the dough it may help to make your dough lighter and fluffier.
My Dough is Too Sticky
If your dough is too sticky feel free to add 2 tablespoons of coconut flour in replacement of 2 tablespoons of almond flour. The coconut flour will absorb some of the moisture which can make your dough too sticky.
Or if you find your dough too sticky to work with, make sure to chill the dinner roll dough for enough time before rolling it into balls and you won’t have a problem.
Another tip if you find that your dough is a little too sticky is to lightly wet your hands with water or lightly grease your hands with oil.
My Rolls Don’t Rise
Low Carb dinner rolls won’t rise exactly the same as regular ones because of the lack of yeast. However, there are 2 things you can do to help them rise more.
1 – Place 8 ice cubes in a cookie sheet and place it on the bottom rack of the oven. The water will add moisture in the oven and help the rolls to rise.
2 – By using a little more baking powder than normally called for, it will also help fathead dough to rise more.
Dinner Roll Toppings
There are a lot of toppings that you can use on your low carb dinner rolls to make them different and give some variety to them. Some of our favorites are sesame seeds, or poppy seeds, some dried onion flakes, and garlic powder.
By brushing the tops of your low carb rolls with melted butter, it will help the spices to stick better to the rolls.
Other Diets This Recipe is Good for
Gluten-free – Wow, bread/rolls that are actually gluten-free, a great treat!
Vegetarian – These rolls can certainly be enjoyed by vegetarians. A great combo to have with your minestrone soup!
What Can I Use Fathead Rolls for?
These fathead rolls are good for a ton of things, in almost every type of meal.
Dinner Rolls – They are great to serve with a big meal with guests. If you serve them warm they won’t even know that they are eating low carbs rolls and will probably ask you for the recipe.
For Dipping – You can eat them with chili or with soups. It’s always good to have a roll to dunk into your soup or chili or stew. Or dunk it in your low carb turkey or chicken gravy…
Breakfast Sandwich – You can slice one in half and pop it into your toaster oven and have it with your eggs in the morning for breakfast.
Regular Sandwich – Turkey, ham, roast beef or any of your favorite meats and cheeses go really well with these yummy rolls.
Burgers – We have made burgers several times with these amazing rolls, now my family asks for them when we have burgers.
What to Serve with Dinner Rolls
Dinner rolls are so versatile that they go so well with so many foods. They are a great accompaniment to serve with any meal, such as any meat dish or seafood dish.
They go especially well with soups and stews, chili and salads. Basically, anything that has a sauce with it is perfect for dunking!
They also go perfect with a prime rib roast or turkey dinner!
How to Store Dinner Rolls
Because your Keto rolls have a lot of cheese in them, the best way to eat them is to eat them when they are hot, right out of the oven. But If you don’t finish eating all of your fathead rolls, don’t throw them out. You can place them in a plastic Ziploc bag and store them in your refrigerator.
Since they are made primarily of egg and cheese, they will start to get hard quickly and won’t last long on the counter in your kitchen. It’s best to store them in the refrigerator, and they will stay fresh in there for about a week as long as they are wrapped properly.
Can I Freeze Keto Dinner Rolls?
If you want to keep your dinner rolls fresh for more than a few days, you can also freeze them. Place the rolls in a piece of aluminum foil and then put them into a large Ziploc freezer bag and place the bag into the freezer.
If stored properly they should last up to 2 months.
How to Reheat Keto Dinner Rolls
These Keto dinner rolls taste better when they are hot right out of the oven, or if you have leftovers you can reheat them. It’s easy to reheat your yummy fathead rolls. You can use a toaster oven, a regular large size oven, or a microwave oven for reheating.
Any of these ways work just fine. So it is entirely up to you. Or try it all ways and see which way you like the best.

Description
These Keto Dinner Rolls are yummy and easy to make. Chewy and Delicious. You can use Fathead Dough for so many recipes, you’ll want it with every meal!
Ingredients
- 1 ¾ cups shredded Mozzarella Cheese
- 1 jumbo Egg
- 2 ½ oz Cream Cheese
- 1 ½ cups Almond Flour
- 1 ¼ tsp baking soda (or) 4 tsp baking powder
- 1-2 Tbsp melted butter
Instructions
- Melt the 2 kinds of cheese together in the microwave, probably 1 ½ min stirring halfway through.
- Put the melted cheese in the food processor, add egg and mix until well blended.
- Next, add the flour and baking soda. Mix till thoroughly blended, only 20 seconds or so.
- Wrap the dough in plastic wrap and place it into the refrigerator for 30 min.
- Preheat the oven to 400 degrees.
- Line cookie sheet with parchment paper.
- When the oven is preheated, remove the dough from the refrigerator and cut the dough into 8 pieces. Place evenly on the cookie sheet. Press down so that the bottom is flat but the tops are still rounded.
- Melt 1-2 Tbsp butter and brush it on top of the rolls.
- Sprinkle the tops of the rolls with sesame seeds, poppy seeds, dried onion flakes, garlic powder or any other spices that you would like on top of your low carb rolls. The melted butter will help the spices stick better to the rolls.
- Place rolls in the oven. To help the rolls rise better, place another cookie sheet on the bottom rack of the oven with 8 ice cubes.
- Bake for about 12-14 minutes. The rolls may split and turn golden brown.

Other important things to keep in mind about this recipe…
The rolls will get harder as they sit around because of all the cheese, so keep the leftovers in the refrigerator and reheat.
Use a little extra baking powder to help your Keto rolls to rise better.

Linda, I usually use whole milk, low moisture mozzarella. I tend to buy the store brand which is a little cheaper but whatever is on sale at the time is what I buy. I do not like the skim or low-fat types.
