Keto No Bake Cookies

Keto No-Bake Cookies are seriously SO GOOD! With only 6 ingredients, they are made within minutes and will satisfy your sweet tooth. These keto peanut butter no-bake cookies are now my new guilt-free treat, and I hope they become yours too!

My mom used to make no-bake cookies all the time when she was younger and living in a studio apartment, with no stove to cook on. Her recipe though was a bit different than mine, it definitely wasn’t low carb and sugar-free. 

But now we have a quick keto dessert that you’re gonna love! These low carb no-bake cookies are the perfect dessert you can make all year round. 

We are entering cookie season and in the wintertime, all anyone wants to do is bake. Our chewy Keto Chocolate Cookies are a great example! Plus, people are home more nowadays, and baking has taken off even more. 

However, sometimes you need a dessert that doesn’t require the oven, and these keto peanut butter no-bake cookies are the ones to make.

What are Keto No Bake Cookies?

Keto no-bake cookies are exactly how it sounds…they are cookies that don’t require baking in the oven. How is that possible??

Instead of baking them in the oven, you make the cookies then place them in the freezer to firm up. That’s it! They should always be kept in the fridge or freezer to ensure they don’t get too soft at room temperature.

There are several different varieties. Traditional no-bake cookies typically have oats in them, but oats are higher in carbs. So instead of oats, I used unsweetened shredded coconut, and let me tell you…fabulous!

What Do They Taste Like?

Keto peanut butter no-bake cookies are creamy yet crunchy due to the shredded coconut. You can really taste the peanut butter in them, and they taste similar to a chocolate peanut butter cup.

What Do You Call Them?

People call these keto cookies different things. Some call them “Summer Cookies” because they are perfect for those hot summer days when you don’t want to turn your oven on. 

Depending on where you live in the country, you will hear different names such as: Preacher Cookies, Peanut Butter Delights, Chocolate Oaties, and 1st Grader Cookies. 

Personally, I just stick with calling them No-Bake Cookies, or Keto No-Bake Cookies.

Keto No Bake Cookies Recipe

Have you been looking for a no-bake keto dessert? You found a delicious one if I do say so myself. 

Seeing that these are no-bake cookies and don’t require the oven, they are super easy to make. To be more precise they only take 5 minutes to make and then only 20 minutes to firm up in the freezer. 

They make a perfect easy keto snack at almost any time of the day!

Carbs in Keto No Bake Cookies

Keto no-bake cookies with coconut flakes are honestly such a great low carb snack and are obviously made with all low carb ingredients.

One keto no-bake chocolate peanut butter cookie is only 1.8 NET CARBS. 

That is way lower when compared to a traditional no-bake cookie, which can have about 24 NET CARBS per cookie. So crazy right?

What Ingredients are in No-Bake Keto Cookies?

Peanut Butter – Creamy unsweetened peanut butter is the best option. Make sure the label says unsweetened, no added sugar. 

Butter – 4 tbsp melted butter. You can use salted or unsalted butter, whichever you prefer. I tend to always use salted butter. 

Low Carb Sweetener – Be sure to use a powdered sweetener. It will dissolve the best, and not leave you with a grainy texture. My go-to choice is Swerve Powdered Sweetener. 

Cocoa Powder – Unsweetened cocoa powder, any brand you want to use is fine. Keep in mind that if you use Dutch Processed Cocoa Powder, it’s going to be darker and richer. I used Hershey’s Unsweetened Cocoa Powder for this recipe.

Vanilla – Adds the perfect hint of vanilla flavor.  

Unsweetened Coconut Flakes – Unsweetened is key.

Sweetener Options

When picking your sweetener you want to make sure you pick one that really dissolves well and doesn’t leave you with a gritty taste. I recommend using a powdered low carb sweetener. 

The 2 brands I like to use are Swerve and Lakanto

Some people like to use liquid sweeteners such as liquid Stevia, but I have never tried it in these cookies. You can’t use liquid stevia as a 1:1 replacement with sugar.

Best Peanut Butter for No-Bake Cookies

Keto No Bake Peanut Butter Cookies

There are so many brands of peanut butter in all of our grocery stores, but the ones that are strictly keto-friendly are the ones that have just one ingredient…PEANUTS.

Ok well, it technically can have 2 ingredients…PEANUTS AND SALT. But that’s it! So be sure to check the label before buying it. 

Whatever brand you choose to buy, make sure it’s creamy unsweetened peanut butter. Chunky peanut butter doesn’t mix well with the other ingredients.

Can I Use Coconut Flour or Almond Flour?

There is absolutely NO almond flour or coconut flour in these easy no-bake cookies. Why?? Because they just don’t need it.

There are other recipes out there for keto no-bake cookies that you can use coconut flour for, but not this recipe.

The peanut butter and the shredded coconut hold the cookies together perfectly and no flour is needed.

Cocoa Powder 

I ended up using Hershey’s Unsweetened Cocoa Powder, but you can use any brand of unsweetened cocoa powder that you want for this no-bake keto dessert. 

Keep in mind that if you are using Dutch Processed Cocoa it’s darker and richer. Some people don’t like it as much but I don’t mind it at all. 

My mom doesn’t like super rich dark chocolate desserts so that’s why I chose to use Hershey’s Unsweetened Cocoa Powder.

Different Variations of Keto No Bake Cookies

If you want to make some different variations to your no-bake keto cookies here are some ideas: 

  • Use a different nut/seed butter. You can use sunflower seed butter (sunflower seed butter), almond butter, or cashew butter. 
  • Instead of shredded coconut, use any kind of chopped nut. Pecans, walnuts, and almonds are great options. 
  • For a dairy-free option, use vegan butter or coconut oil instead. 
  • Add sugar-free chocolate chips to the batter.

Peanut Butter Alternatives

So what if you can’t use peanut butter? Do you have a peanut allergy or maybe you just don’t like peanut butter? That’s ok we have other options. 

Instead of peanut butter, you can use – sunflower seed butter, almond butter, or cashew butter. Try whichever one is your favorite!

Mix-Ins

You may not like coconut…and that’s ok. You can substitute the coconut with – shredded almonds, chopped pecans, chopped walnuts, or any other kind of nut. The nuts act as a binder and will hold the other ingredients together. 

You can also leave the coconut in and add any chopped nuts at the same time.

Can I Use Oats?

Oats are the classic choice in traditional no-bake cookies, but unfortunately, they are way too high in carbs. To be exact they have 49 NET Carbs per cup….way too high for keto or a low carb diet. 

However, if you are making these for someone who isn’t eating low carb then feel free to go ahead and add oats.

  • Mixing Bowl 
  • Cookie Scoop 
  • Baking Tray
  • Silicone Mat or Parchment Paper

How to Make Low Carb Keto No Bake Cookies 

Follow these steps to make the easiest keto no-bake cookies with coconut.

Mixing the Dough

Step 1: Melt the butter, and gather the rest of the ingredients.

Step 2: In a medium-sized bowl add the peanut butter, melted butter, vanilla, cocoa powder, and powdered swerve. Stir together until thoroughly mixed.

Step 3: Add the shredded coconut and fold into the dough.

Step 4: Using a 1” cookie scoop, scoop the dough on the tray. You can get about 15 cookies.

Step 5: Roll each cookie into a ball. Using the palm of your hand gently flatten each cookie.

Freezing

Step 6: Place in the freezer for 20 minutes. 

Step 7: Remove and enjoy!

Best Tips

  • Before you get started, make sure you have all of your ingredients measured out and ready to go. It will make the process go faster and smoother.
  • Double the batch if you want more than 15 cookies.
  • Be sure to line the baking tray with either parchment paper or a silicone mat. 
  • Use creamy peanut butter, and not crunchy. The creamy texture blends better with the rest of the ingredients. 
  • Read the label on the peanut butter. It needs to say unsweetened peanut butter, no added ingredients. 
  • Use unsweetened cocoa powder. 
  • Vegan option – Use vegan butter or coconut oil. 
  • Use a cookie scoop to scoop the mixture out, it’s much easier. 
  • Do not store at room temperature or you will have a big melty mess on your hands. 
  • Store in the fridge for 1 week.
  • Store in the freezer for up to 3 months.

Making Vegan No-Bake Cookies

We can easily make these low carb no-bake cookies vegan. All you need to do is replace the butter with the same amount of coconut oil or vegan butter.  Yup, it’s that easy!

Making Nut-Free Keto No Bake Cookies

It is possible to make keto no-bake cookies nut-free as well. Instead of peanut butter, you can use SunButter (sunflower seed butter.) 

Make sure you buy the one that is Organic and doesn’t contain any added sugar.

How to Store Keto Peanut Butter No-Bake Cookies

These low carb no-bake cookies should be stored in the fridge or the freezer. If you leave them out at room temperature, they will melt so you don’t want to do that. 

Place them in either an airtight container or a large Ziploc bag. Then store in the fridge or freezer. 

I prefer storing in the freezer, they will last up to 3 months that way. If you store them in the fridge they will last about a week or so. So you decide which way is best for you.

Delicious right from the freezer! I used almond butter (peanut butter is sometimes too overwhelming for me). I also used 4 T. sweetener instead of 3 T. I might even go up to 5 T. next time. I am interested in trying cashew butter. I am really enjoying the recipes on this website: this one, the zucchini bread with almond flour. I'm very impressed.
