Fudgy Keto Chocolate Cookies

These chewy Keto Chocolate Cookies are made in just a few minutes, they are super chocolatey, soft, and just plain ole delicious. Oh, and did I mention they are flourless?

Chewy Keto Chocolate Cookies

Our low carb chocolate cookies are made with almond butter making them so rich in flavor and texture. If you are a true chocolate lover then these are the right cookies for you.

We first experimented with these keto chocolate cookies back in September, actually when I was recovering from surgery. My brother-in-law came to visit for a few days and one night I felt like doing something, so cookies it was.

Except that I couldn’t eat them because I was on a super strict low fat and bland diet after having my gallbladder out. Thankfully between my husband, his brother, and a few friends that came to see me after surgery I had plenty of taste testers.

I got all good reviews from everyone after making them. It literally took me less than 10 minutes to prep the dough. The texture is super-fudgy and similar to our Keto Brownie Recipe.

The only time-consuming part is waiting for your Chocolate Keto Cookies to cool before eating them. As tempting as it may seem, be sure to wait, otherwise, they will fall apart.

If you are a big fan of cookies and milk then try these delicious low carb chocolate cookies with a glass of regular milk, almond milk, or even cashew milk. Start dipping!!

What are Chocolate Cookies?

Chocolate cookies are pretty much how they sound….it’s a cookie that is completely all chocolate. While the main ingredient is chocolate, other ingredients usually are things like flour and sugar.

Chocolate is so versatile which means adding nuts, chocolate chips, peanut butter, marshmallow, etc…makes for a great chocolate cookie.

Even though Keto Chocolate Chip Cookies are always amazing, sometimes you just want MORE CHOCOLATE!

Are Chocolate Cookies Healthy?

Easy Keto Chocolate Cookies

Normal chocolate cookies are not what you’d call the healthiest considering they are made with cane sugar and white flour. For just 1 chocolate cookie it can have as much as 200 calories

Instead, we made our flourless keto chocolate cookies as a much better and healthier option.

We use a combination of a low carb sweetener, creamy almond butter, some eggs, and unsweetened cocoa powder. That makes our low carb chocolate cookies only 88 calories per cookie.

You can have 2 of our chocolate keto cookies for fewer calories than a normal chocolate cookie.

Are Chocolate Cookies Keto-Friendly?

A lot of chocolate cookie recipes are not keto-friendly but thankfully we have the perfect one for all of you who are craving chocolate this winter.

  • For 1 regular chocolate cookie, it can have as many as 20-25 net carbs. That’s per cookie, remember.
  • For 1 keto chocolate cookie, it has only 1.2 NET Carbs, again that’s per cookie.

Do you see the difference??? It’s quite large!

What Ingredients are Keto Chocolate Cookies?

Keto Chocolate Cookies ingredients
  • Almond Butter – Creamy almond butter acts as the main binding ingredient.
  • Eggs – 2 eggs.
  • Water – This helps to thin out the batter a bit.
  • Low Carb Sweetener – Powdered swerve is my favorite in this keto chocolate cookie recipe because it dissolves the best and doesn’t give you a grainy texture.
  • Cocoa Powder – Unsweetened cocoa powder is key, but feel free to use whatever brand you prefer. I chose to use Hershey’s Unsweetened Cocoa Powder.
  • Baking Soda – Helps produce a soft cookie.
  • Chocolate Chips –  This is an optional ingredient. But if you are going to use them then be sure to use sugar-free chocolate chips. My go-to brand is always Lily’s Chocolate Chips.

Can I Use Almond Flour or Coconut Flour for this Recipe?

Actually, I chose not to use almond flour or coconut flour for this keto chocolate cookie recipe. Rather, I decided to use creamy almond butter instead. That makes these cookies completely flourless.

It might sound odd, but I promise flourless baked goods are really good.

You can also make low carb chocolate cookies with almond flour or coconut flour if you like but I haven’t experimented with them in this recipe yet. If you try it make sure to let us know how they come out in the comments section.

Best Sweetener Options

When it comes to sweeteners you can honestly use whatever one you like. I chose to use Powdered Swerve because I found that the powdered texture blends really well.

Other low carb sweeteners that can be used are:

  • Erythritol
  • Monk Fruit
  • Allulose
  • Stevia – Powdered or Liquid (Keep in mind that stevia is not a 1:1 ratio with other low carb sweeteners. (Check here for a Stevia conversion chart.)

Best Chocolate for Low Carb Cookies

Fudgy Keto Chocolate Cookies

We already discussed our sweetener options, so let’s move on to which chocolate is best to use in this low carb chocolate cookie recipe.

Be sure to use: Unsweetened Cocoa Powder. I recommend using a natural cocoa powder, and not a dutch-processed powder. The reason for that is because the natural cocoa powder is acidic and reacts with the baking soda, resulting in a softer cookie.

If you want to add some chocolate chips or chocolate chunks I think that’s a great idea. Just be sure to use sugar-free chocolate chips

My go-to brand is always going to be Lily’s Chocolate Chips. They are sugar-free but sweetened with stevia. They are delicious.

Can I Leave Out the Eggs?

It is possible to make this low carb chocolate cookie recipe egg-free. That being said, if you completely omit the egg, it will leave you with a VERY fragile cookie.

Don’t forget that keto cookies are already fragile as it is, so making them without an egg will make them even more fragile.

If you want a sturdier egg-free low carb chocolate cookie then you can use a flax egg. Combine 1 tbsp flaxseed meal with 3 tbsp water and let sit for 5 minutes, then add to the cookie dough batter.

Different Variations of Low Carb Chocolate Cookies

Low Carb Chocolate Cookie Recipe

The nice thing about chocolate is that basically anything goes with it….trust me on that one.

You can enjoy these delicious low carb chocolate cookies as is, or you can spice it up a bit.

  • Ice Cream Cookie Sandwich – Take 2 keto chocolate cookies and put a scoop of low carb ice cream in between. If you are looking for fantastic sugar-free ice cream then please try our Low Carb Vanilla Ice Cream. It’s super yummy!
  • Don’t forget to Dunk – Go ahead and dunk your rich keto chocolate cookie into a glass of cold milk, almond milk, or even cashew milk.
  • Small Chocolate Cookies – Use a smaller cookie scoop and get more of a bite-sized cookie.
  • Frost, Frost, Frost – Make a batch of cream cheese frosting or some buttercream frosting and spread it all over your keto chocolate cookie. Helps to cut the rich chocolate flavor.

Add-In Options

Now here are some add-ins for this keto chocolate cookie recipe:

  • Chocolate Chips – Add some sugar-free chocolate chips to the batter, or add some on top of each cookie before baking.
  • Chocolate Chunks – You can chop up a Baker’s Chocolate Bar, or any other sugar-free chocolate bar and add it to the batter.
  • Peanut Butter – Add a few tablespoons of sugar-free peanut butter for a great chocolate peanut butter cookie.
  • Nuts – Walnuts, almonds, and pecans are a great addition. The nuts help cut the chocolate if you don’t like a super-rich flavor.
  • Marshmallows – Sugar-free marshmallows go great with chocolate cookies!

How to Make Sugar-Free Keto Chocolate Cookies from Scratch

Let’s dive right into how to make this Keto Chocolate Cookie Recipe!

Mixing the Ingredients

Step 1: In a medium-sized bowl combine the almond butter and eggs.

It might be easier to use a large spoon rather than a whisk because it can be hard to stir.

Step 2: Add ¼ cup of water, and mix again.

Step 3: Add the cocoa powder, baking soda, vanilla, and the remaining ¼ cup of water. Mix until fully combined.

Forming the Cookies

Step 4: Line a baking tray with parchment paper or a silicone mat.

Step 5: Use a cookie scoop to scoop out 6 cookie dough balls. The cookies will spread a lot so don’t overcrowd the tray.

My Cookies Fall Apart

Best Low Carb Chocolate Cookies

If your keto chocolate cookies fall apart it’s probably because you didn’t let them cool nearly long enough. That’s a VERY IMPORTANT STEP!

Let them cool on a baking tray for at least 10 minutes, then transfer them to a cooling tray to finish cooling. I’d say let them sit there for another 10-15 minutes to be safe.

My Cookies are Flat

I found that my low carb chocolate cookies did spread out and are on the thinner side, which honestly I like. They are still delicious and moist.

However, if you don’t want them to be quite as flat as mine, a few things you can try are chilling the dough for about 30 minutes, adding ½ -1 tsp of baking powder, and using cold eggs. Cold ingredients in general help things from spreading.

If you try any of these things please let me know in the comments below.

Other Diets This Recipe is Good For

  • Gluten-Free: I love being able to give you guys delicious gluten-free cookie recipes.
  • Dairy-Free – It can be hard to find a dairy-free cookie out there while making sure it still tastes great, but this one is not only dairy-free but also tastes quite delicious is I do say so.
  • Nut-Free – This recipe is not nut-free due to the almond butter. But you can replace the almond butter with either Tahini or Sunflower Butter.

To make these keto chocolate cookies vegan it’s actually not that hard at all. All you need to do is either leave the eggs out completely or replace them by using a flax egg

  • 1 egg = 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water, let sit for 5 minutes)

Can I Make These Cookies Ahead?

Sure thing! These chocolate cookies can be made ahead without problems, it’s actually better to do so.

Since they need some time to cool anyway, you want to make sure that you have plenty of time before everyone starts digging into them.
