A breakfast casserole is pretty much exactly how it sounds…it’s an egg mixture mixed with different meats, veggies, and cheeses then baked all together in a casserole dish. It’s very similar to a crustless quiche.

- Heavy Cream – We use only a little bit to help the eggs get fluffy.
- Breakfast Sausage – Ground breakfast sausage is what most people like, but Italian sausage works great too.
- Cheddar Cheese – I chose to use shredded cheddar cheese, but you can use another kind if you prefer.
- Baby Spinach – Be sure to use fresh spinach, not frozen.
- Onion – If you are on keto then stick to only a ¼ cup, otherwise you can up the amount to ½-¾ cup depending on how much you like onions.
- Spices – Salt, pepper, and chopped garlic.
Best Sausage for Breakfast Casserole
Any ground sausage that is labeled as “breakfast sausage” would be the most classic choice to use in this recipe.
However, there is absolutely nothing wrong with using Italian sausage instead, in fact, I’ve done that several times because that’s what I had on hand and I loved the way it came out just as much.

Let’s start making our sausage egg and cheese casserole without bread!
Step 1: Preheat the oven to 350 degrees.
Step 2: In a medium bowl whisk the eggs, heavy cream, salt, and pepper together.
Step 3: Add the ground sausage, onions, and garlic to a cast iron pan or frying pan. Cook on medium heat.
Step 4: Once the sausage is fully cooked, add the spinach, and cook for 1-2 minutes.
Step 5: If there is any liquid in the pan, drain it.
Step 6: Add the sausage and cheddar cheese to the eggs. Whisk together.
Step 7: Spray an 8×8 or 9×9 baking dish with cooking spray.
Step 8: Pour the egg mixture into the pan.
Step 9: Bake for 25 minutes, or until cooked through.

In my oven, a breakfast casserole takes exactly 25 minutes to be cooked to perfection. However, keep in mind ovens are different so I recommend checking it at 20 minutes.

Before Baking: Assemble the casserole as per the recipe card, but DO NOT BAKE. Pour the egg mixture in a disposable baking dish, wrap it tightly with plastic wrap and then foil. Take out the night before and let thaw in the fridge overnight. Bake at 325 degrees for 25 minutes.
After Baking: Bake the keto egg casserole according to the recipe card. Let fully cool down to room temperature. Wrap the entire casserole in plastic wrap and foil and place in the freezer for up to 1 month. When ready to eat, thaw in the fridge overnight and reheat in the oven or microwave.

For this EXACT gluten-free breakfast casserole the best pan to use is a glass or ceramic 8×8 or 9×9 pan. You can use a large pan, but it will end up being a much thinner keto egg bake.
If you decide to use a larger pan then what you should do is up the amount of eggs. If you use a 9×13 baking dish then use about 12 eggs instead.
Other Diets This Recipe is Good For
- Gluten-Free: We make our sausage and egg casserole without bread making it completely gluten-free.
- Dairy-Free: I used heavy cream mixed in with the eggs, but you can replace it with almond milk instead. Also, you need to omit the cheese completely or replace it with vegan cheese.
- Vegetarian: As you see we put sausage in this low carb breakfast bake, but you do not need to add any meat at all. Load up on the veggies!
- Paleo: Again it’s the heavy cream that doesn’t make this quite paleo, so use almond milk instead.

This was the best quiche/egg casserole ever! My tweaks: I added a 1/3 chopped jalapeño to the onion and used chopped and sautéed kale instead of spinach. Also added 1/4 tsp basil, 1 chopped tomato, and only 1/3 lb of sausage. DEFINITELY making many more times!! It was so flavorful and the texture was amazing. If in doubt, readers, try this recipe!
