Another great casserole recipe is here for you….Keto Pizza Casserole! I’m sure you all know by now how much I love casseroles and how much I love being able to share new recipes with all of you. 

This one will only take about 30 minutes or so in the oven and probably about 15 minutes to prep. In my book, that’s pretty awesome. I have a feeling that everyone’s lives are extremely busy these days and I’m happy to share a new easy recipe to help make your weeknights easier.

What is Pizza Casserole?

Honestly, a pizza casserole is basically exactly how it sounds. It’s a crustless pizza, cooked in a casserole dish, using chopped cauliflower as its base. 

Then you top it with your favorite pizza sauce, toppings, mozzarella cheese, and then bake until bubbly! 

Basically, it’s the perfect dinner! 

Is Pizza Casserole Kid-Friendly?

This recipe is absolutely kid-friendly. Making a keto pizza casserole is actually a great way to sneak some veggies into your kids’ meal. We use a layer of roasted cauliflower on the bottom, but when covered with sauce, cheese, and pepperoni they won’t even know they are getting veggies too.

Is Pizza Casserole Keto?

Our recipe is FOR SURE!!!!  Instead of using rice or potatoes in this casserole, we use chopped cauliflower. It not only is super filling but it’s made with all keto ingredients. 

It’s even better when you use our recipe for homemade Keto Pizza Sauce as it’s perfect for this low carb pizza casserole.

How Many Carbs in Pizza Casserole?

Ok so let’s go over the carb content for this low carb pizza casserole. Depending on the type of traditional casserole you make they can run as high as 30-40 carbs per serving. But that’s definitely not the case with our pizza casserole. 

1 serving of this recipe only has 7.2 NET CARBS. 

That’s pretty good considering how filling it is.

What Ingredients are Low Carb Pizza Casserole?

Keto Pizza Casserole Ingredients
  • Cauliflower – Chop the cauliflower into large bite-sized pieces. 
  • Olive Oil – Toss the cauliflower in 2 tbsp of olive oil. 
  • Spices – Salt, pepper, and  Italian seasoning. 
  • Italian Sausage – 1 lb of your favorite Italian sausage. I tend to use Perri mild or hot sausage. 
  • Garlic – Fresh chopped garlic added to sausage.
  • Sauce – Try our homemade keto tomato sauce or our keto pizza sauce. Either of them will work. 
  • Cheese – Shredded whole milk mozzarella was my choice. 
  • Pepperoni – I like to use Boar’s Head thin-sliced pepperoni. But feel free to use any brand you like. 
  • Mushrooms – This is optional, but my family absolutely loves it.

Substitutions & Different Variations 

There are always options and substitutions when making casseroles, especially pizza casseroles. Check out a few different suggestions below.

The Sauce

You have a few options for the sauce in this keto pizza casserole. If you are on a low carb diet, watch how much you add as the carbs can add up quickly, especially if you are using a store-bought sauce.

Here are some great ideas for vegetables to add to your pizza casserole:

  • Mushrooms

Vegetables are a great addition to pizza casserole, just make sure you keep track of the carb content in the ones you are using so you don’t exceed your daily limit.

Topping Combos

As far as topping combinations go, it’s a pizza casserole so pretty much anything goes. Pizza and pasta are the two things that you pretty much add almost anything to and it’s delicious. Here are a few good combos that we like: 

  • BBQ Chicken – Replace the sausage with shredded chicken, add sliced red onions, homemade Keto BBQ Sauce, and shredded mozzarella. 
  • Traditional Veggie – Add all the veggies you can think of! Don’t forget though if you are on keto veggies have carbs, so keep that in mind. 
  • Caprese – Sausage or ground beef, add some sliced fresh tomatoes, fresh mozzarella, and fresh basil, then drizzle with olive oil and vinegar.

Dairy-Free Option

If you are looking for a dairy-free option, then replace the mozzarella with vegan cheese. My favorite brand is Violife. They have tons of different great vegan cheese options.

How to Make Keto Pizza Casserole 

STEP 1: Preheat the oven to 425 degrees. 

STEP 2: Chop the cauliflower into large bite-sized pieces.

STEP 3: In an oven-safe casserole tray, add the chopped cauliflower, olive oil, salt, pepper, and Italian seasoning. Toss the cauliflower.

STEP 4: Bake for 20 minutes.

STEP 5: In the meantime, add the sausage and garlic to a frying pan. Use a meat chopper to break up the links. Fully cook, put in a bowl, and set aside.

STEP 6: Put the sliced mushrooms in the frying pan and sauté.

STEP 7: Take the cauliflower out of the oven once tender.

STEP 8: Pour the sauce over the cauliflower and spread evenly. Add the ground sausage, then cover with the shredded mozzarella cheese. Top with sliced pepperoni and sautéed mushrooms.

STEP 9: Bake for 10 minutes or until the cheese is melted and the casserole is bubbling.

How Long Does it Take to Cook Pizza Casserole?

Casseroles are great for weekend dinners when you are tired and don’t want to spend too much time cooking. This keto pizza casserole is a prime example of that. It only takes about 30 minutes to cook, and about 10 minutes of prep time.

Can I Make It Spicy?

Sure thing, you can make pizza casserole as spicy as you want. I’m not a huge fan of too much spice so I make it mild. 

However, if you want extra heat, go ahead with crushed red pepper flakes and use hot Italian sausage. Both of those additions should give you some extra spice.

How Many People Does This Casserole Serve?

It really depends on how big of an appetite your company or family has. But we found that based on the 9×13 casserole pan, it has about 10 servings per pan.

What to Serve with Keto Pizza Bake?

You really don’t need to serve much with this keto pizza bake, it’s pretty hearty and filling. All you need is a yummy salad and you are all set.

We like making a classic Green Salad, Strawberry Salad with Avocado and Feta, Watermelon Salad with Feta, or a Spinach Salad with Bacon and Eggs are all great ideas. You can also try some of our low carb Garlic Bread (recipe coming soon).

Make-Ahead and How to Store

Make Ahead: You can easily prep the keto pizza casserole ahead of time and keep it stored in the fridge for up to 24 hours before baking. 

Leftovers: After the pizza casserole has been baked, store your leftovers in an airtight container and place them in the fridge for 4-5 days.

How to Reheat

Reheating the whole pizza casserole while frozen: Preheat the oven to 350 degrees, and bake for 40-50 minutes until hot and bubbly. 

Reheating Leftovers: In a microwave-safe bowl or plate, microwave for 30-second intervals.

Can You Freeze Pizza Casserole?

Sure thing, in fact, this keto pizza casserole freezes like a dream. There are 2 different ways of freezing your pizza casserole. 

  1. Bake the whole casserole in a metal tin pan for easy cleanup. Remove from the oven and let cool. Once cooled, wrap the pan in foil a few times and place in the freezer for 2-3 months. 
  2. Pre-portioned servings can either be placed in Ziploc bags then frozen, or in a plastic container and then frozen.
