Looking for a good Low Carb/Keto Crackers recipe? It all started when we wanted to make some Low Carb Tortilla chips to go with our Low Carb Salsa. I started experimenting with different ingredients and my chips happened to come out more like crackers than chips.

They are crunchy and go well with cheese and pepperoni and we made several varieties. My family loved them so much they said: “Why don’t you call these Keto Crackers?” And so our recipe for low carb crackers was born, which I’m happy to share them with you.   

What Ingredients are in Keto Crackers?

Almond Flour-This flour is made of 100% almonds, it tastes great and it’s fantastic that there is actually a flour for people who have to eat a low carb diet, allowing them to have things to eat and not feel deprived.  

Which brand is best for almond flour crackers?  There are many different name brands, Bob’s Red Mill, Honeyville, Kirkland’s which is Costco’s brand. There hasn’t been one that I’ve used that I don’t like so I’d go with whichever you can find cheaper.

Butter – This is an ingredient that goes well in any recipe when you are on a Low Carb diet/Keto diet, and Gluten diet plans. It adds so much flavor to things without changing your blood sugar level, and it’s butter so it tastes awesome!

Olive Oil – Just make sure that it is Extra Virgin Olive Oil. Like butter, this ingredient adds a lot of great taste, also a necessary ingredient in Keto/Low Carb diets and also gluten Free, Sugar-Free, Paleo, Grain-Free and Vegan diets.  

Chia Seeds – I had never used these seeds in anything before, but I was pleasantly surprised. They add so much character to these crackers. 

Is Almond Flour or Coconut Flour Better for Low Carb Crackers?

People want to know if almond flour or coconut flour is better to make crackers with. They are both very versatile flours to use and I have used both types in many Low Carb recipes. Both are designed for baking and can work for you.

Honestly, I like them equally, both have very similar nutrition information, so I think it’s your preference or maybe even what type of flour you happen to have at home. Either way, your Keto Crackers will come out amazing. 

What do Almond Flour Crackers Taste Like?

They taste like regular crackers that you would buy in the store. By changing the toppings on the Low Carb Crackers, we were able to make 4 different varieties and they took on the taste of the toppings.  

They also resemble one of your favorite buttery flavored and crispy crackers that you may be used to eating. And you can make them as crispy as you want to, just leave them in the oven longer and they will crisp up really nice.

How to Make Keto Crackers – Instructions:

1. In a small bowl add the chia seeds and water and let sit for about 15 min or until the seeds soak up all the water.

2. In another bowl mix the almond flour and spices and olive oil. Now add the chia seeds to this mixture and mix well to create your dough.

3. Take the dough and form it into a large ball, then divide into 4 smaller balls. This will make it much easier to roll flat.

4. Place each ball between 2 pieces of parchment paper and roll out as thin as possible.

5. Next, remove the top piece of paper and cut the dough into an evenly sized square or rectangle pieces. Put any excess dough from around the edges back into the bowl and add to another ball of dough.

6. Keep crackers on paper and place the paper onto a cookie sheet and bake at 400 degrees for about 8-9 min, depending on how hot your oven runs, keeping an eye so as not to burn your crackers.

7. When golden brown, remove from oven and let stand for about 5 min. Then take off the paper with a small spatula.

How to Roll the Dough:

This is a fun job and it quickly became the job for my daughter in law to do. She tried it once and now she became the designated “dough roller”.

This is probably the most crucial part of making Low Carb crackers because it will determine whether or not your crackers come out crispy or not.

You get some parchment paper and roll out a portion of your dough in between 2 pieces. Make it thin enough so that your crackers will crunch but not too thin so that they break easily. It may take a few tries to get the desired consistency, but it makes all the difference in the world!

What Variations of Keto Crackers Can I make?

There are all kinds of things that you can put on top of your crackers.

You can put any kind of spices on top that you like, for instance, coarse salt, rosemary, Italian seasoning, garlic powder, dill…etc

Or you could even add some tasty seeds to your crackers like sesame seeds, caraway seeds, poppy seeds…etc

Another thing you can do is to sprinkle some shredded cheddar cheese on top so that it will melt into the cracker while baking…yum!

Can I Eat Crackers on the Keto Diet?

Yes, you can for sure eat Low Carb Crackers on your Keto diet. They are made from almond flour which is very Keto-friendly, very low in carbs. And eat them together with some cheese and pepperoni and you have some protein and fat together with your crackers.

Are Keto Crackers also Gluten-Free?

Yes, these Keto Crackers are gluten-free. There is nothing in these delicious crackers that my friend with a gluten allergy can’t eat. Using almond flour in the replacement of wheat flour makes these Low Carb crackers a gluten-free hit!

What Can I Serve with Low Carb Crackers?

There are so many things that you can serve with your newly found Keto crackers. Here are some ideas if you want to make them for lunch or a snack: 

You can make up some Tuna salad or chicken salad and spread it on your crackers or you could also dip your crackers into one of your salads.

You could also make up a plate of cheese and pepperoni or cheese and salami and eat it for your lunch or serve it together with your Keto Crackers. They are so delicious together.

If you are a cheese lover, for example, there are many types of cheese that would go well with your Low Carb Keto Crackers. For instance cheddar, parmesan, roman…etc

Another way to eat these delicious crackers is just to spread a bit of butter on them, or some peanut butter (no sugar added kind). Spreading some butter on them is a good choice, especially if you’re on the Keto and need to finish off your day with a little more fat

Also, hummus makes a good spread for these crispy crackers. There are so many flavors of hummus that go so well with all the different varieties of crackers that we made. Any other Low Carb spreads of your choice will go well with the crackers. One of my husband’s favorite ones is whipped cream cheese with chives…soooo creamy and delicious!

How to Make Crackers Crispy?

We all love crispy crackers so the best way to make your Low Carb Crackers crispy is to first roll them out between 2 pieces of parchment paper. The key is the thinner you can roll out the dough, the crispier your Keto/Low Carb crackers will be. 

If it’s not rolled out enough your Crackers will be thicker and as a result, won’t be as crispy as if they were rolled out thinner. We experimented with this process a few times until we found the right balance so it might take a couple of tries for you too.

Another necessary thing to do to make your Keto crackers crispy is to cook the dough right away. If you refrigerate your dough and then try to bake it latter the almond flour has already absorbed the liquid and it’s harder to bake it and get the crunch that you are looking for.

Plus leave them in the oven as long as it takes to make them crispy. Once you have leftovers and if they lose their desired crunch stick them back in the oven for a few mins to crisp again.

Do I Have to Poke Holes in the Crackers?

You may wonder about poking holes in the top of your crackers? Well, I have done it both ways and to tell you the truth I think either way is fine. My crackers have come out crispy every time but by poking holes in the tops of the Keto crackers, it may let a little steam out of the dough to help speed up the cooling process which also may help give you crispier Low Carb Crackers. 

The fork holes also give the tops of your Keto crackers a little design that may add a little more character to your crackers. 

How to Store Low Carb Crackers:

Making homemade crackers is fun, but you might not eat all of them in one sitting and want to store them for another day.  The best way to store your Low Carb Crackers is to put them in a plastic container with a tight-fitting lid to keep as much air out as possible. This will keep them as fresh as possible.

How long do they stay fresh?

Your Keto crackers will stay fresh for you in an airtight plastic container for about 5-7 days. If they have lost some of their crunchiness, then simply take them out of the container and place them back on a cookie sheet and place them in the oven.

Re-heat them at 350-375 degrees, depending on how hot your oven runs, for 10-15 mins until crispy again. Keep an eye on them while reheating since all ovens run a bit different.

Description

This Keto Crackers recipe is an amazing way to replace your store-bought, high carb crackers with some great, tasty, crunchy ones instead… An added plus, they are so easy to make too.


Ingredients

  • 1 Cup Almond Flour
  • 1 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 1 Tbsp Chia Seeds
  • ¼ Cup Water
  • 1 Tsp  Salt
  • 1 Tsp Garlic Powder 

Instructions

  1. Preheat oven to 400 degrees
  2. In a small bowl add the chia seeds and water. Stir and set it aside for 15 minutes or until all the water is absorbed.
  3. In a bigger bowl add almond flour, olive oil, and spices. Mix together.
  4. Add chia seeds and blend together.
  5. Next, take the mixture into your hands and form one large ball.
  6. Divide the large ball into 4 smaller balls and then place each one between 2 pieces of parchment paper and roll out as thinly as possible.
  7. Take off the top layer of parchment paper and using a sharp knife or pizza cutter, cut crackers into even square or rectangle pieces. 
  8. With the excess dough from around the edges, throw it back in your bowl and add to the remaining dough, then repeat the process all over again by placing the next ball in between 2 pieces of parchment paper and roll out as thinly as possible……etc
  9. Bake on top of the parchment paper on top of a cookie sheet at 400 degrees for about 8-9 min, give or take, depending on how hot your oven runs and how thick or thin that your crackers are. Check periodically to make sure that your Low Carb Crackers are not burning.
  10. Remove from oven when golden brown and let cool for 5 min before removing with a small spatula from your tray. 

Notes

0.4 Net Carbs for each cracker

Make sure to always use parchment paper to roll out your dough so that they don’t stick to the pan.

Roll your dough as thin as possible and bake them till golden brown so that the crackers get crunchy. Cut them into even squares and season the tops.

Rhonda, The chia seeds in this recipe add character and stability to the crackers. I have never veered from using them in this recipe. Flax seeds work the same way as chia seeds, but are a slight bit bigger in size. Don't forget the water. Ground up nuts are good too, but don't forget the water. Cooked quinoa can be used but it is higher in carbs. Ground up sesame seeds is also a good choice, but don't forget to add the water. Hope this helps

I just made these, I used 2 Tablespoons of Olive Oil, and everything else according to the recipe. I sprinkled sesame seeds on top prior to putting into the oven. I am a big fan of savory snacks and I think these are really good. Thanks for posting.

Easy and delicious. Used both butter and olive oil, added sesame seeds. I did have to cook them for much longer than suggested, likely because mine were not rolled, thin enough, but still came out wonderful. Sorry, distracted you

Hi firstly want say how tasty are these 😋 but followed you step “Place each ball between 2 pieces of parchment paper and roll out as thin as possible” and they are super thin and agree with other comments they aren’t suitable for dipping. I’ll eat them and definitely make thicker next time 😊
